Sweet Chili Sauce Recipe
{makes for excellent dip for summer/rolls or marinade too}
Ingredients:
1 cup water
2/3 cups apple cider vinegar
1 cup sugar
1/4 cup grated apple or diced dried apricots
2 ts grated ginger
4 cloves minced garlic
1 ts red pepper flakes
2 tb cornstarch
~ Whisk and simmer everything together until thickened.
Ccokie Recipe Ingredients:
2¼ c unbleached flour
2 ts cornstarch
1 ts baking soda
2 sticks unsalted, browned butter
⅔ c brown sugar, firmly packed
½ c granulated sugar
1 whole room temp. egg + 1 room temp. egg yolk
2 ts pure vanilla extract
½ ts instant espresso powder
¼ ts fine salt
10-12 oz bittersweet or semisweet chocolate chips/chunks
Salt for topping

It’s been so windy these last couple weeks! The rain hasn’t bothered me much, so I’ve still gotten out. :) but I did get bit up the other weekend by the monpi (well that’s what I was told they are) and that was itchy and new bites showing up over an entire week! Ugh! Haha

Hello, and thank you for the videos you have posted on St. Croix and the USVI. My wife and I have started researching retiring in the USVI, and so far we have read that St. Croix is the best of the three main locations in the USVI.
Can you please recommend the best source of information to research retiring there?

Good night. Though we arrived sight unseen, it's not something I would particularly recommend for others. I would highly recommend taking a visit first for an extended stay if possible to experience a bit more day-to-day life versus vacation mode. There are no stateside conveniences here and costs are high so that's something to definitely consider. I have an e-book that I link beneath each of my videos that details everything you may need to know.
