Barry, I know you likely won't see this but I just wanted to thank you for always being you, and for singing something inside so strong. Yesterday was my first father's day without my Dad and it was a hard day, but your videos usually make me smile, but today even more so. You have the same energy as my Dad who also loved to cook and was excellent at it(couldn't cook before he got married though). Something inside so strong was a song that he absolutely loved and you singing it in the kitchen with Boston just filled me with joy. He loved to cook & sing and he loved dogs and his family so much. Thank you for making me smile. ❤❤❤
this may have been mentioned before, but I didn't see it - the reason the underside (or top) of the puff pastry dessert looked so pale is because the honey/syrup is supposed to go directly on the parchment lined baking tray, then you put the fruit on top of that. that will caramelize the honey and help to seal the fruit into the pastry and make a nice crispy top.
I'm nearly 60 and ever since I was a kid my sister and I have been doing the upside-down pastry thing. We'd wait for all the leftovers from my grandma's pie to be smooshed together then divided between us. Then we'd cut up apples or plums and cover them with the pastry, egg wash and sugar them and they'd go in the oven after the pie was cooked for our pudding! Ain't anything new, despite what TikTok thinks!
I grew up in southern Connecticut. The usual grinder is more like a subway roll, but it is a hoagie and it is a sub. The Italians love the heavier roll for their sandwichs but sometimes everything slips out. That sandwich reminds me of one they would make in New Haven. They would also put in roasted peppers and not the mayo. just oil and vinegar
The way I have always had it was meats and cheese on bottom side of the roll. Lettuce, onions, oil and vinegar on top then put it open faced in a pizza oven for 5 minutes. Pull it out, close it up, wrap it in paper. Tomatoes were never on it and never mayo.
@@mrbarrylewis Give it a shot sometime, the sub shop I worked in used salami, pepperoni and capicola for the meats. At home just use a pizza stone, you already knew that tho, love the channel.

The puff pastry recipe I saw was with savory filling. Caramelize onions, ground meet on top, cheese and then pastry. That would also probably be delicious. I've got to try it soon!
I've had crushed croissants when i bring some home all warm and put it in the bag with my groceries lol. They become flat af but still incredibly delicious, especially warm and freshly baked.
I wondered how puff pastry, tinned fruit and croissants could cost £50, but I suspect that the sandwich accounts for the biggest part of the cost because of all the meats.
The 'reverse tart' really appeals! So simple. I wonder how it would turn out using rhubarb, with a little ginger in the honey - something to try for sure!
