I've only seen actual Ube in the Philippines - it's not available in the US city I live in. There are some vendors that mail Ube online - reviews/comments are mixed (a lot of negatives). Purple Yam found here in the US is not Ube. It has a similar color but the flavor is different.

Hi! yes, you can grease the pan lightly with oil/butter. Just keep in mind, butter might brown the edges a bit more Keep in air-tight container room temp for 3 to 4 days.

Hi! You can use ube jam, just adjust the sugar in the recipe so it won't be too sweet. You can reduce the ube extract to 1 teaspoon instead of 2 teaspoons.

It might end up being too dense/heavy without the egg. There are egg replacements I found online such as yogurt or chia seeds but I don't know how to replace that with 1 egg. Goodluck!

I made these today! my tester toothpick came out clear but the brownies were still nice and fudgy! definitely will use this recipe again in the future

Hi, you could try replacing the sugar with the ube jam. You might still need Ube flavoring to enhance the brownie. I hope that works!

Yes you can, I haven't tried it myself but I suspect it'll be more fudgy and dense.
