Hi Ling. I made this dish before but prepared it differently than you. I cooked both shrimp and eggs separately. Added onions with it, combined everything then added oyster sauce and white pepper, give it a good mix and it's ready. The family loved it. My next Chinese dish will be on Sunday. Dish to be determined.

Why did you take the shrimp out of the pan and add them to the eggs, then return to pan? Wouldn't it have been just as easy to leave the shrimp in the pan and then add the eggs and onions to them? Just wondering....
Mom always said i was Asian in a past life my pallet my reading i read right to left up to down, gardening i just lived it said i want to feed people and fish. Turns out im determination i successfully love gardening and herbs also saved three times horses that escaped i just new what to do and i hate sugar cereal rather have soup or rice for breakfast 😉🤣 past life problems no wonder in school i was shocked at the nasty foods that was grade yuck even he cafeteria workers were so mean they were horrible cooks took it out on us i now have confidence i could say the kids in school need more folks that can cook and live it love it make yummy flavors and healthy meals

May I suggest change, leave out the green onion, and add fresh chives. Similar, but subtle difference.

I sometimes just add eggs in. By taking out shrimp, we stop cooking shrimp and mix well with eggs/green onions.

They as cafeteria in school and college get paid great have summers off they in my region were awful
I usually use fish sauce and I add the eggs onto the the shrimp and stir fry
