Corn starch, potato starch. Very common to use in all countries cooking. Just a little bit with water is all you need. Do you ever thicken gravy or soups? Can use corn or potato starch for that too.

I made it today and i must say, it was the best scrambled egg i have eaten in my entire life. It was super delicious. The only thing i want to ask is why i needed to cook the shrimp first? I saw another recipe where the shrimp was fry in the wok first and then added to the egg substance before this substance was poured into the wok to fry.
@@Equality-and-LibertyIt's okay to fry the shrimps instead of boiling them. If I were to cook this dish, I would fry the shrimps too instead of boiling them.
Boiling will remove more fishy smell from shrimp and get rid of excess flour leaving a thin coating of the marinade to retain succulents. You can stir fry but that may become crispy and counter intuitive for this dish. The point of this is to make it silky and smooth.

嘩啦!這個菜是否叫做油浸蛋液???
滑蛋蝦仁做不好,主要是家裏的爐火不夠猛,四五隻雞蛋份量要分兩次炒,就會香滑,否則一次過炒,蛋液會將油鑊冷卻,祇會悶煮而炒不香,而蝦仁更加不會用出水去處理,最理想的方法是泡油增香

@@womaow6744 勾芡已經用了,澱粉加水已經加入雞蛋裡面,但是炒蛋的時候,多些油是一定需要的,否則蓬鬆不起來。

Because shrimps take longer to cook than eggs. If you don't cook it first then the eggs will be overcooked.
