This is the recipe we used in the video. It allows for a 1kg of dough.
Ingredients:
• (100%) Flour 00: 475grs
• (70%) Water: 330 grs
• (20%) Poolish: 100 grs
• (20%) Sourdough Starter: 100 grs
• (2%) Salt: 10grs
