Keto variation: 1) Omit the tater tots. No only high carb but processed. Ingredients: Potatoes, vegetable oil (sunflower, cottonseed, soybean and/or canola), salt, yellow corn flour, dextrose, disodium dihydrogen pyrophosphate, dehydrated onion, sodium sulfate, "natural flavoring", 1b) Add more eggs in lieu of starch. 2) Use uncured, sugar free bacon. 2b) Substitute ground beef for sausage (processed, additives) 3) Use real chunk cheese, not preshredded processed variety with added starch and preservatives. Avoid added colorings, preservatives. 4) optional: add onion, bell peppers, cabbage, mushrooms, arugula, broccoli, or cauliflower for added fiber if desired. Go organic with the peppers because they're in the dirty dozen. 5) Skip the ketchup. Sparing portion of fresh salsa, and/or guacamole. 6) Optional hot pepper. 7) Optional splash of vinegar for sparkle.
I would bake the tots a bit before adding the eggs. I like them crunchy vs soggy. I would add some peppers and onions while cooking the sausage, just to add a different note to all the meat. Maybe mix in a bit of sour cream to the eggs. Then top with some finely diced chives to add a bit of color on top.
High in carbs, high in fats, high in sodium, high in cholesterol. Good amount of protein I suppose. Breakfast for 6 or 7 people? Pity the poor bachelors of the world who'd either have to eat this every day for a week or throw it out.

My wife does something similar to this but overnight in the crockpot and it is GREAT!!! I always request it for my birthday breakfast
