    Bro, seriously you’re the greatest waiter I’ve ever learned from. Thank you for everything. Would you please tell me why I need to know that Russian service was created by a King? I thought I just needed to know what to do and when to do it. Do I really need to know the back history of hundreds of years ago? Or can I skip thru it to the actual steps of service? Is knowing that history going to affect my service or increase my sales or tips?

      Thanks, Brian.
      There is a lot of confusion about the Russian and English services because both are really similar! That is why I explain the history! You should know that learning anything connected to the F&B (even little history) will help you in future situations! We are not just robots, performing the steps of service! We are also entertainers and we talk and entertain our guests, so having some extra knowledge will be of great help@

    Very nice work, but only if you explained how you would put the food on a plate. For example, which side for meat, and which side for potato….Then who is chosen to serve first in an order, that is just my suggestion. Also, do you pour wine before you put food or after?

    The English service style reminds me of How the Grinch Stole Christmas, when the grinch would cut the ham and pass it to everyone else at the really long table.

      Silver service is just like russian or French service! The Russian evolved from the French but the nae come from the set up used on the table! To impress their guests the host uses silver plates and so on!

      I don't call it American, Antonio! It is called so in the books and not only Italy but Greece, Bulgaria and all over the world we use this system in our restaurants!

    What type of table service is used on cruise ships as it allows many people to be served quickly?

      Ahatashamul, it depends where do you work on the ship but basically if you work in the main restaurant you will be doing a lot of Russian service: Serving from a tray into the guests plates with spoon and fork!
      If you work in the a la cart, fine dining restaurants you will have normal American type of service or French service if you are working in the top of the world ship!

    Hi sir can I am confused why you serve food in left side not in right? Because I'm working in a hotel and they teach us always serve in right side of the guest🤔

      There is a difference between the service procedure in the USA and the rest of the world. In America the plate is serve from the left side of the guest with the left hand. The rest of the world it is done as they teach you. Everything else is the same, just that is different.

      Anna, I know it is not easy but with time and practice you will get used to it. If the restaurant is not a fancy one and you don't need to follow the etiquete 100% ask your manager to do it left hand once in a while till you get used to right hand

    How many knives how many spoons how many forks how mamy plates are required in russian service?

      Good question, music lover! Up to three forks and three knives are permitted on the table excluding the butter knife and the dessert fork! If the dinner requires additional silverware you should prepare a plate with more forks and knives to put on the table for every additional meal! basically you have to be ready with so many forks and knives to cover all the items you are going to serve for the dinner! it could be 8 course meal, it could be 3 or even 20! The only thing is that for the initial set up we use up to 3 forks and 3 knives!

      American service is the normal a la Carte service that you see in most restaurants around the worlds! But you serve the food from the left side with the left hand in the States! The rest of the world you do it with right hand from the right side of the guest!

      Mohd Khan, in French service there is no platter service! The head waiter ( the Chef de Rang ) will bring all the ingredients that are needed to prepare the food on a Cart ( Gueridon ) and start cooking the meals in front of the guests! When the food is ready there two options:
      First - in case you have just two guests on the table ( three maximum) you can put the prepared food in the middle of the table and the guests serve themselves! But the Chef de Rang communicate that with the guests while cooking the food. He can also just plate the food and give it to the Demi Chef de Rang to serve it to the guests one by one!
      Second - in case there are more than three guests on the table, every guest receives a plate with the food he ordered, prepared and decorated by the Chef de Rang and that's it! No other options, unless the guests insist on something else ( which never happens)

      If by preplated you mean that the plate is set on the table in front of the guest empty and then the food is brought....you are right!

      Basically no difference! The silver service was invented by the French! Then the Russian tzar decided to take it to the next level and started serving the food for his guests in gold plates! The Russian ambassador i Paris was the one who was throwing lavish parties using this service long after the silver service was forgotten in Paris and that is why they rename it to Russian service! Of course there are some different interpretations but mostly it is the same thing!

      Ryan, bread plate is just a bread plate and you can't be confused about it! !It is the plate that we put on the table next to the forks and the butter knife stays on it! The guests are using it to eat some breat and butter while waiting for their food to be prepared and served! Dessert plate is a plate we serve desserts for the guests! It is smaller than the normal meal plate but not so small as a bread plate! I guess that should be answering your question! Good luck buddy!

      You are welcome Anyuta! No you cannot say those two are the same! Yes American service is done is a la carte restaurants but you have as well a la carte restaurants with french service so you cannot say they are all the same! A la carte means that you bring a card ( menu) to the guests and he chooses what he is going to eat!

      It is not the same. The bread plate we put on the table when we set up the restaurant and the butter knife stays on the plate. Dessert plate is a plate we serve dessert on. It could be in any shape and form. You don't need to know much more about dessert plate.

    My friend you have mixed everything up , what you call French service is actually Russian service, and what you call Russian is French, the English service is nothing like you said it was , and there is no such a thing called American service , thats called service a l’assiette, and whats a fish knife doing on the bread plate ? Again if you are going to teach people teach them right, don’t miss-lead them.
