Some have ham or bacon or onions or herbs like thyme or chives. Some use white cheddar for a white sauce. There are so many options. They are all so tasty. 😋 The classic au gratin potatoes is a little different. The potatoes are simmered in milk with a bouquet garni, nutmeg and a dash of salt. Then the potatoes are placed in a dish that has been rubbed with garlic and butter. Heavy cream is poured over the top of the potatoes and grated gruyere cheese is sprinkled on the top of that. Really you can't go wrong either way. Both are fantastically delicious.

Would love to try this with a few variations. Sauteed onions layered in would also be wonderful. Maybe a bit of garlic just to give it a little more dimension.
@thesauceandgravychannel I've also done the base sauce with salsa and added chorizo to the potatoes and smoked. Honestly, your cheese sauce is perfect to play with new flavors.
