    Traditionally you use herbs de provance not rosemary salt. And no garlic mayo. That is the real way to make them

    My grandfather used to make this for breakfast. With Eggs, Kielbasa and biscuits. I would put ketchup on the potatoes. So good. I miss you Papa.

    In germany we call this dish ,Bratkartoffeln‘ which means fried potatos. Add some smoked bacon or ham stripes or put a fried egg on top with some pickles on the side. Simply delicious.

      Ah, I was looking for this. My mama called it smothered potatoes, and we didn't get fancy, it was just potatoes and onions fried in fat with salt and pepper. Nothing deeper than that.

    I've been making Lyonaise potatoes since I was 18 or so. It's an almost intuitive recipe and friggin delicious.
    It's best with new potatoes or golden potatoes compared to russet.

    Grew up eating home fries with onions, with salt, pepper and rosemary, but without pre- boiling. The sherry vinegar sounds tasty, cant imagine the mayo. I'd add a fried egg.

      I’ve never heard of that term. I was born and raised in NC. Must be different cultures and terms within towns and cities in NC. I knew them simply as fried potatoes. Or fried taters.

    My family has called it fried taters and onions..try mixing the butter with bacon grease, ..that's what we've been doin since at LEAST folks came out west!! Lol. I made them at least 4 times a week for my family .

    Guys!!!!! Stop boiling your potatoes before frying them!!!!!!! It is unnecessary and you lose too much of the flavour and the nutrients!!!!
    You can perfectly fry sliced or diced taters without boiling them: medium to low heat and COVER WITH LID! That is important. Flip occasionaly. It might take a litlle longer than boiled potats, but you will LOVE the taste!!
    I only boil potatoes for mash. Actually, I don’t boil ANY other veggies. If need to be soft: steam and lose less of the goodness.
