    If you stick marzipan to cake with apricot jam then let it harden for a few days then brush the marzipan lightly with cooled boiled water then place the icing on top this will help the icing to stick.then trim icing off bottom of cake & leave to harden (don't tuck under😂)i before placing ribbon round.Thats the fastest made christmas cake ever enjoyed watching you.well done.It usually takes me about1 week to ice cake 😂😂 keep up the good work.merry christmas

    I have made fruitcake for years and found that the reason I never liked it as a child was because of the citrus peel, so I leave it out! I put in candied pineapple, as well as raisins, dates, currants, and cranberries. Thank you for these lovely videos I am loving your accent!!

    You did well, I did even worse with my first one and hate icing Christmas Cakes now. I will say that we didn't have google, which is where I always check things out beforehand. One thing I kept saying, as if you could hear, was that the icing is malleable and you just press the edges and sides until they are smooth. The bottom edge is trimmed to the top of the board not on the edge and it makes it easier to manage and cover with ribbon. You got the top of the cake so lovely and smooth and that is usually the hardest thing. I hate fruit cake too but my husband loves it and so does most of his mates and they are always telling me I make the best fruit cake. I think it is the rum that I put in it and brush on it while it is hot, I then wrap it up tightly and let it cool in the wrapping. Your husband is a gem, what a great sense of humour he has, love it.

    My grandmother always stored her fruit cake in a big square Tupperware container that MUST have 2 quarters of a green apple in beside the cake to stop it from drying out or going mouldy! Marzipan was used to plug up any dips and gaps and sinking after baking, then fondant over top. Loved watching you pull it all together Stacey! I love being a learner, especially in the kitchen 😊

      Great job but put a light jam wash between layers of icing. Helps them stick together

    Such an easy to make Christmas cake and such few ingredients to use,no eggs and butter!great.i always made a white fruitcake as I was the only one to eat traditional english dark cake,but this one looks scrummy!thankYou once again for sharing such a lovely recipe❤

    A very hot knife cuts the icing much easier. Never seen two layers done like that, always one layer over a smoothed cake.

    Who's watching this a year later? Just burnt my cake so had to cut off the top bit. Wasn't going to ice but now I'll have to, to cover the shabby top. Got the icing at Pak n Save. Stacy you are hilarious in this.

    Absolutely cracked up laughing during this podcast. Just been 'walking through' the process of making Christmas cake with my niece. I spent hours lining the cake tin....while the niece put the cake together. Showed her how to feed the cake with brandy and explained we would need to wait 3 months for the cake to mature. Told her how last Christmas I did exactly what you did, didn't moisten between the two layers of icing....was a real nuisance, because I didn't fix it like you did.
    We definitely take ourselves far too seriously. I am going to try your cake with your timeframes while mine is maturing. It doesn't have to be Christmas for my husband to eat fruit cake!

    I hate fruit cake too, that said I have made one (at least) every year since I’ve been married, which is 42 ! Yours is a very different recipe to mine , I hope your Husband appreciates your effort as much as mine does. I only very recently found your channel, and am loving this series and the differences between your festive traditions and ours here in England 😊

    I, like you, hate rich fruit cake but there's a Lotte Duncan recipe for a light fruit cake which is lovely and I've used that before. I hate doing square cakes as they are so much harder to ice than a round one. I keep mine very simple, I use a star cutter in different sizes and put them on top of the cake with some little edible silver balls and I've also made a kind of polar bear to sit on top as well. I think you did great, you live and learn and I bet your hubby loved it.

    Yes! You did well! Yes you had to first put it on the cake board before putting it on the board.

    Yes! I once made it with the icing and marzipan but normally just add brandy. Once cooled wrapped it in wax paper and tinfoil. Once a week add more brand until it was enough.

    Beautiful! I don’t eat it either myself because it doesn’t like me but I like it! However traditionally here we make the cake part around October time then every week until the week before Christmas, you pour a tablespoon of brandy over the whole cake. Week before Christmas it’s then marzipan’d and iced x

    It will all taste the same in the end Stacy and such a great easy fruitcake to do.😃 just a little hint to pick up the icing when its rolled out without stretching or tearing it drape it over the rolling pin.

    You did a great job you don't need to tuck it under just need to cut the access as close to the edges as possible and then just run your ribbon around the bottom to hide the bottom edges

    My mom made traditional fruit cake. But she never iced it for Christmas. Typically we only put the almond paste (marzipan) on if we were going to put icing like Royal Icing on for a wedding or anniversary cake.

    My Mum would make the fruit Christmas cake, and another one especially for my birthday, four days later....
    With the marzipan and everything....
    It made up for the small amount of presents i got, i suppose 😊🇳🇿🙏

    I love rich fruit cake at christmas soaked with alcohol. I use marzipan and royal icing which is nicer and less sweet than role out fondant icing. It hard and crunchy when dry.

    i usually buy a dark fruit cake but really, I'd eat any eat with marzipan on it!

    To stick the ribbon to the cake cut the length to fit the cake and wrap it around the cake the just dot some water to the end of the ribbon to the cake and stick ribbon to cake

    I make a fruit cake that has dates,figs,candied cherries,candied pineapple,currants,and orange juice. When it is cooked I pour whiskey over the top. The recipe has been handed down on my husbands side.

    Just watched the school girl error. It's so much more fun to see someone giving it a go. Next time do it on a flat surface not the rack. Sure it will turn out great and taste delicious.

    My mum made her dark rum fruit cake 3 months before Christmas, l didn't like it. She also made a light fruit cake no liquor in it, that one wasn't too bad.

    I'm not a fan of fruitcake either - bless your heart for making it for Husband, he is a lucky man! There is a "world famous" bakery here in Texas - Collin Street Bakery - that cranks out fruitcakes for Christmas since 1896. I too only use fresh grated nutmeg and for those that may doubt, there is a difference. Have you ever used tonka beans? I know they are illegal here in the states but I managed to get my hands on some a couple years ago and I LOVE to add them to those spicy baked items. They are reminiscent of vanilla/honey/nutmeg and if you can get them, I recommend using them! You would use these the same way you would use nutmeg.
    How fun you are going to go spend some time with your grandkids! They are going to be so happy to have that time with you!

      @@FarmersWifeHomestead yes, look into the tonka beans - if you are someone that notices nuances in foods and can't quite put your finger on what it is, you'll appreciate using tonka beans. I also like using orange blossom water, mainly in my carrot cake cream cheese frosting recipe. It is kind of potent, a little goes a long way. So my recipe calls for 3/4 tspn vanilla, I would use 1/2 tspn vanilla and 1/4 tspn orange blossom water. If you make homemade cranberry sauce it is good in that also.
      I am feeling somewhat better today, thank you. Thankful that it's Friday and that the work day is about over - I've been working on my annual performance review since yesterday and I'm kinda over it. Ready to go home, put on my fat pants, and plop on the sofa and just be a lump LOL. Are you with your grandkids now? Are you guys having fun? Happy weekend Stace!

    I’ve just seen this recipe and will have to try it. It’s interesting that there’s no eggs, butter or sugar in it, the cake alone for me sadly as the marzipan and fondant icing are a big NO NO - will be kinder to my blood sugar levels, being diabetic. THANK YOU.

    you dont tuck it in you fill all the gaps with the marzipan first to make it straight then cover it, and you mold it over the corners the bottom is then cut you dont tuck it in

    I make a boiled fruit cake that has a tin of crushed pineapple in it. When I bake it I cover the top with foil, and pull it off for the last 20 minutes of cooking. It keeps it super moist.
