- Matt Tebbutt gives us his top tips for poaching fish. Here he's using milk infused with onion, mace, parsley and black peppercorns, which is perfect for making fish pie or parsley sauce.
I tried it this was - delicious, thank you. I used a pan where the fish nearly covered the base thereby using less milk. (Seems there are a few negative nellies who are outraged you don't cook it the way "gran" used to)

me - it's nutritious. And we didn't used to eat pumpkin in the past either
make sure you use a filthy pan, otherwise it wont work

You should have cleaned your pan first before poaching the fish.
but then you have to do it all again afterwards.

clean your pan and take skin off fish first
