    Another great syrup episode Bruce, raspberry syrup has to be one of my favorite service to use not only in mixed drinks but especially on my pancakes on Sundays! You have a good day and can't wait till next week's episode 😀

      @@BarTalkCocktails Do you recommend any particular brand of V.S. Cognac in this drink? I previously used Hennessy V.S. but I also have a bottle of Martell V.S. which is a fair amount cheaper than the Hennessy. Any suggestions? I am getting ready to make another batch of raspberry syrup, but will have to try the triple berry in the future!

      You certainly could use a cheaper Cognac or even inexpensive brandy to help preserve this syrup. So little is used and you should save the good stuff for slowly sipping. And yes, if you liked my raspberry syrup, you'll absolutely love my Triple Berry Supreme. It's divine. Cheers!

      My favourite overall of the Big Four is Martell. I am not so much as happy with their VS, however.
      I'll usually get Remy VS or Henny.

    If not fortified w/ alcohol I suppose it should be refrigerated for storing, correct? Going to try to make this tomorrow as I've got lots of ripe berries!

      Sorry I didn’t see this sooner. I usually store syrups in the fridge. The fortifying does make them last longer for sure.

    Never knew about fortifying syrups with a small amount of alcohol. Neat. Wondering if this extends their shelf life. I'll try it either way.

    Made this today during quarantine. About to fortify, but no cognac on hand. Fingers crossed this brandy will do the trick.

    ....And this was AWESOME. I SAMPLE THE SYRUP ALL BY ITSELF! ...all the time.
    I did not help it along, (time is on my side) & I used 3oz. Of Absolut vanilla to fortify. Otherwise to the recipe THE BOMB!

    Any tips for using this recipe with frozen raspberries? I'd imagine that you wouldn't need as much water.

      Frozen berries are great to use when fresh are not available. Sometimes too, frozen berries can taste better than fresh because they are picked when they're at their ripest. You may want to cut back on the water a bit but, it's all about reduction. If you use the same amount of water as I did in the recipe, your cooking time will take longer to get a reasonably thick consistency. I would probably only use 1 cup of water if I was working with frozen raspberries. Cheers!

    I've always used equal parts fruit, water, and sugar,; but lately I have been cutting the sugar in half. Never really thought about cutting the water in half, but I'll try it

      @@BarTalkCocktails I did the cloudberry syrup some months ago i used 80% white sugar and 20% muscavodo sugar, topped it of with some bourbon.
      He loved it.

    Clover club is the first thing that comes in mind, but are there other cocktails that use raspberry syrup?

      There are quite a few cocktails that use raspberry syrup. Some classics and some newer-style riffs or modern classics. There is the Floradora, which is from the early 1900s. The Bird of Paradise Fizz (1930s), the Blinker, also from the 1930s. Try using raspberry syrup in a Raspberry Margarita, Raspberry Martini, Raspberry Mojito, Spiked Raspberry Lemonade, French Martini, a classic Knickerbocker, Raspberry Press, or a Raspberry Vodka Smash. You could easily sub out practically any recipe calling for grenadine with raspberry syrup. Happy experimenting. Cheers!

    Right now cherries are in season, (though for not very much longer), and one could do the same with them. I have found that instead of using vanilla extract, cherries seem to be even better with a touch of almond extract. I suspect this would be true as well with raspberries or blueberries.

    I tried a variation of this syrup. I didn’t have enough raspberries so topped it up with blueberries. And used a tiny bit of gin. Hopefully it will work

    I wonder if this would work in a soda
    I hear you can combine simple syrups with club soda to make a flavored soda, a vanilla raspberry soda sounds amazing right about now

      Maybe I can tinker around with making my own flavored syrups at home :) for some reason the idea of a Lapsang Souchong Tea syrup is stuck in my head, I guess I feel like a sweet smokey herbal syrup would be pretty good, Idk I have no experience with this so it'll be fun to learn. Cheers!

      This was delicious. I grew my raspberries & wanted the vanilla to take a passenger seat, so I skipped the liquid vanilla & fortified it with Absolut vanilla vodka.
      This made a dimensional gimmlet

    Does the cognac or vodka extends the syrup Shelf Life? In that case (i mean with just 1/2 OZ) by how mutch aproximatly?

    Is the lemon juice for flavoring or does it do something else for the syrup?

      Lemon juice does add flavour. It helps break down the sucrose molecules into glucose and fructose as you heat the sugar and raspberries. Also, raspberries are generally both tart and sweet. The ones I used were more on the sweet side. The lemon juice helped to balance out the flavour. Cheers!

    Would a crock pot work for reducing syrups?

      Definitely, a crock pot will do the job. Start off on high with the lid on. After it comes up to temp remove the lid and turn it on low. As it's a slow cooker, it will take longer to reduce than on a stovetop. Cheers, Tom.

    That's a gorgeous raspberry syrup, eager to make my own. I love your channel.
    What would you estimate the yield is on this? That bottle looked like it was about 375 ml or so.

      Close to 375 ml. It's actually a little less, about a cup or 236.59 ml. It's a great tasting syrup. I hope you enjoy it. Cheers!

      Cognac is an optional thing. I added it because it preserves the syrup a little longer. Typically, you'll get a couple of weeks if kept in the refrigerator. With the cognac, you might get a month out of it. However, it won't last that long because it's that tasty. Also, the cognac adds another flavour dimension to this already awesome tasting raspberry syrup. Hope you make some. Cheers!

      My raspberry syrup will keep for a couple of weeks if stored airtight in the refrigerator. I added some cognac to it so you'll probably get a month out of it. What I like to do is freeze it in ice cube trays to extend the life of it even longer. Cheers!

      Add an ounce of vodka or another neutral spirit. It will keep for a few months.
