they weren’t really immune before the maze - they had the potential to be, but it’s the events of the maze that then created the new chemical in their brains that made them immune. so even though the maze was absolutely horrible, it was what caused them to be immune

They were put into the maze so WCKD could study their brains and understand why they were different from everyone else. And then they escaped the maze, they tried making a cure from their blood which resulted in killing them basically

Yeah they were - if you read the fever code then it basically tells the story of when they worked at WICKED designing the maze together. They could also communicate telepathically through their brain implants so they were already really close before they properly fell in love (but that's not featured in the movies). It's a really great book, definitely recommend it if you haven't read it before. Hope this helped :)
Probably they were trying to trigger a form of amnesia that comes from trauma. Think of it as more like repressed memories, which makes it easier to alter their existing memory. Drowning also deprives the brain of oxygen, which in turn can lead to some types of brain injuries. However, for the movie purpose this process was a strict routine that probably had hundreds of deaths before they were able to wipe the mind successfully. I know a few soldiers that have completely forgotten what happened the day they were injured. In some cases, a healthy brain will repress the memories so your body can focus on healing. Aside from all of that it is movie science where anything is possible. Hopes this helps you some.
In the books WCKD used pain to make them forget their real names and brainwash them into using the fake ones, maybe them drowning is a take on them forgetting their lives before their shipped off into the maze

I like how they set up the telepathy between Thomas and Teresa as someone who has read the books it's good to see they were going to be faithful to that but I'm glad they scrapped it which is contradictory but I never liked the telepathy sections in the books it always took me out of the story

in the books they try a ton of stuff like that, and it never worked. they even tied a boy to the end of a rope and lowered him down the box, but a blade suddenly cut him clean in half, and his bottom half fell into the hole. they have a window looking into his grave as a reminder to not go into the box 😢

They study stuff like trauma response, enzymes and chemicals in the brain that might give them a clue on why the immune are so different. They came to the conclusion that there is infact an enzyme in the brain that unfortunately can not be copied and produced in a lab it has to be harvested from the immune themselves hence why they were being sent off to "paradise" in the scorch trials. It wasn't paradise it was just WCKD removing them from the maze and prepping them for harvest all by making them think that they have escaped WCKD custody.
