- Lean to make stewed red beans in less than 25 minutes with no pressure cooker and packed with rich Caribbean flavors. Caribbean Gourmand Award winning cookbook author Chris De La Rosa shares his recipe for making traditional style Caribbean stewed red beans as it's done in Trinidad and Tobago, Barbados, Guyana, Grenada, St Lucia and Antigua, but in much less time. Vegetarian and gluten free, this stewed beans recipe is great for students and busy individuals who simply don't have time to cook beans the traditional way.
For this stewed beans recipe you'll need...
1 can red beans
2 scallions
1 small onion
2 sprigs thyme
1 tablespoon parsley
1 tablespoon olive oil
1 medium tomato
1/4 teaspoon black pepper
1/4 scotch bonnet pepper (optional)
1 cup water
1/2 teaspoon Caribbean Browning
2 cloves garlic
1/2 cup bell pepper
Optional ingredients are , grated ginger, sesame oil, Worcestershire sauce and Golden Ray salted butter.

I did this and added tiny cubes of sweet potato, carrots, a tsp of coconut milk, pimento.....PERFECT!

Made this recipe today, and I must say it was a lovely dish. In order to incorporate more flavor I added some onion powder, a tad bit of curry powder, some Cayenne pepper, and used coconut milk in place of water. Also, adding a tablespoon of Sofrito did wonders! What I love about this recipe is that you can dress it up however you want, which is always a plus. Great channel!

Basically like his longer version recipe of this but with the canned beans instead. Adding curry reminds me of another amazing soup recipe I tried that used pumpkin curry paste and lemongrass. Going to have to do some kind of mashup with these two soups.

One thing to be careful of if you're vegan, worcestershire is typically not vegan as it's made of anchovies, so always double check the ingredients. :)

this turned out really good! I didn't have Caribbean browning so I just melted down some brown sugar. You really need something for the signature sweetness. Also the first time I didn't respect the scotch bonnet pepper lol it's no joke, 1/4 is more than enough. Soy sauce and sesame oil were also a great addition. I put some matouk's west indian hot sauce in at the end to add some more flavours. Definitely now one of my go to recipes

Nice to see that you cook some nice gluten free recipes. As it is a bland diet if you do not add variety too it and can be a very expensive diet, if you do not know how to cook. Glad to be able to cook, and thankfully I can stay away from most gluten free food in the shops.
