My eyesight is probably correctable but it's too late for me anyway I'll be 24 in a couple of months and I've already been through MIT which wasn't exactly cheap for my parents.
If you'd like to see a pretty cool vid on tailhooking, look for PBS "Landing on a pitching deck" youtubes. You'll see a bunch of bolters, but take a deck of cards and pitch it up and down, then picture that as your runway, at night.

You would apply for a "rated board" and know whether you would be a pilot before you make a commitment. The first step is to contact an officer accessions recruiter. This is your life and you have to make your decisions; it doesn't affect me one way or the other. Check out airforceots dot etc. You would probably be a highly competitive candidate.
Here's how a friend of mine who flew 15s on an exchange tour explained it. Navy they give you the keys to the jet, and a card. The card tells you all the shit you're not allowed to do. The AF gives you the keys and a thick encyclopedia. It tells you what to do, and how to do it. Every situation. Hey, I'm completely stereotyping here. I went up with some great AF fighter guys, and had my ass kicked more than once. They do have all the Gucci gear!
Oh,no doubt that the Eagle had it all over my 14, but there I was, both wingman went down in the chocks on a 3v2, so we went out solo and took both 15s twice, and got one on the third fight. All TACTS kills. Know why? The AF training is so regimented, that they couldn't adapt, and never figured out I was alone! I could tell you a bunch of old guy war stories, but I can tell you that at Red Flags, where we were Red air with the F-5s, we owned the Eagles, the AF crowd loved it.
