Also in this recipe I was wondering why do you add onions after and not with the garlic and ginger paste? Any particular reason? Thanks
I would add onions either before or if i had to add it later then i would first fry the onions till golden brown and then add. Otherwise the karahi would have a slightly bitter taste to it.

I added a teaspoon of sugar at the end because I felt it was too strong or too bitter (for my plain English palate) is that a no no or would it be OK? I don't often eat curry and usually it's a sweet korma so in comparison I can't tell if I've made this right!
Most welcome! There is no harm in adding sugar. If you don't like it spicy i would recommend reducing the amount of chilli. If you do like it sweet you can add a little sugar or increase the yoghurt. Also, keep in mind certain yoghurts are tangy. 😊

Hello Aoa I have a question. Can i add 2 tbsp chilli powder instead of adding 1 spoon chili powder and 1 spoon kashmiri chili powder? Is it taste same?
It depends on what meat you get, sometimes the butchers give old meat and it can be really chewy. What you can also do is add some more water and cook on low heat for slightly longer.
If you want it on the bone, I find lamb shoulder is excellent for long and slow cooking,...you can always portion what you need and freeze it. if not, try lamb neck fillet. It's perfect every time always and stays nice and tender ☺
If your meat is 80% cooked and your water hasn't dried up then increase then cook on high heat. This will dry out the excess water, make sure to now over cook the meat. I hope this helps.

Yes, definitely. I use lamb in all my recipes but even lamb varies in cooking time. Just make sure to check every so often 🙂

Yes, you can but it will be more spicy. Kashmiri chilli isn't as spicy and adds colour and flavour to your curry

In this recipe, I used mixed parts but I normally tend to go for the neck part. You can also use leg and shoulder 🙂

You need a pot of boiling water, let it boil for 10-15 minutes, remove the onions from the water & blend the onions
What's difference from red chilli and kashmiri chilli?
Red chilli is spicier and used for heat, while Kashmiri chilli is milder and mainly adds a vibrant red colour with a subtle flavour. 😊
