4 TBS VEGETABLE OIL
1 TSP PUNCH PHORON
2 BAY LEAF (TEZ PATA)
3 CINNAMON STICKS (CASIA BARK)
1/2 TSP PEPPERCORN
5 CARDIMON
6 CLOVE
1 & 1/2 MEDIUM ONION
1 GREEN PEPPER
8-10 GREEN CHILLI
2 TBS CHOPPED GARLIC
1 TBS CHOPPED GINGER
4 MEDIUM TO LARGE VINE RIPE TOMATO
2 TBS YOGURT
WATER
CORIANDER TO GARNISH
SPICE:
2 TSP SALT
1 TSP TURMERIC POWDER
2 TSP CHILLI POWDER
2 TSP CURRY POWDER
1 & 1/2 TSP CORIANDER POWDER
1/2 TSP CUMIN POWDER
1 TSP GARAM MASSALA

I cooked this saturday night , I didnt have the PUNCH PHORON but what the heck , Im not kidding you I felt like master chef, it was absolutely beautiful, many many thanks .
You just can't beat the flavour of meat on the bone. When the marrow melts into the gravy, it's just beautiful 😋
i had mutton curry once in my life in 1975 on board a ship under repair at Middle Docks South Shields with Malayan crew cost 15p it was the best curry i ever tasted i can still remember the taste now and the meat was so tender, this was standard meals that the crew ate fantastic
I've literally just been out and bought 2 kg of mutton on bone today. 14 quid. Was gonna a do it with the laziza qorma spice mix but may just try this instead. Nice one latiff.

Mr Latif Mashallah, that looks divine, I have replicated many of your dishes, they are all truly wonderful... I would suspect my dishes are only half the taste as yours also. That rice looks divine, but I alway cook great food, but spoil it with the rice, no matter how I cook it :(

Maybe it's authentic Indian and not BIR?
Indian and Bangladeshi cooking style is not the same bro. May be they are cooking the Indian dishes while most of the cooking he does in his channel is Bangladeshi style or inspired from Bangladesh. Also India itself has lots of ethnicities in them that have different cuisines and varieties just like we have varieties based on regions in Bangladeshi cuisine. Btw, FYI, India and Bangladesh are two different countries! lol
I’ve learned so much from watching your videos. I have to say I now make excellent Indian/Bangladeshi dishes, that always go down really well with family.

So sad that mutton is rarely ever found/served in BIR, so underated... as well as goat.
I've been using my local Asian supermarket for years, they do great goat and mutton. It makes incredible stews etc. We used to eat it all the time in the UK and it went out of fashion. I'm definitely trying this recipe!

Do you ever use tomatoes from the tin ? Chopped
At home we normally prefer to use ktc chopped tomato for mutton curry over fresh tomato, I just think it gives the curry a nicer colour, but we don’t add too much otherwise the curry could become too tomatoey if that makes sense , we add about two tablespoons worth of tin tomato 😊 but defo try KtC over other brands , nepolina can be more on the sweet side

I tried this. Took longer then your normal videos BUT OMG, it was freaking awesome. Living in usa, i used store brought lamb and was still great. As it was lamb, i reduced the cooking time❤

It’s a bit tougher but very flavoursome
Just cook it a wee bit longer. Mutton tastes great when cooked in curries. The longer cooking just gives it more flavour.
Love this recipe, its my go to gravy base now for most meat based curries. As a Bengali this really ups my cooking game! However, I do add less of the ground spices!

I love a bit of mutton. I get it from a Pakistani supermarket near here. They also sell all the mad looking river fish and huge chicken breasts for next to nothing.

My local butcher here in Dhaka sells mutton for 950 Taka per kg which is about £8. Inflation here is quite high and with Ramadan coming up, things are getting more expensive. Admittedly, £6.99 in a place like London seems like a real bargain.

The best curry I’ve ever eaten was in a restaurant in Swindon, the place wasn’t your typical dimly lit, atmospheric Indian restaurant, it felt more like a cafe. I knew it must be good because there was a Bangladeshi family having their evening meal there. I ordered a chicken railway curry which I later learned is based on a mutton curry served on the railways during the colonisation of India. I don’t know if there was any mutton in the curry but the flavour was out of this world. Even their special rice was more fragrant than a lot of meals I’ve had at other Indian restaurants.
Latifs, please could you research the railway curry and share your take on it, it’s a bit of a rare one but absolutely delicious. Cheers
