Seems to me you undid the wrong stitches? Doesn’t that leave a hole in your seam. I think you undo the stitches within the free bit of seam allowance. And I’d use smaller stitches and maybe a dab of fraystop because now there’s a risk of them coming undone, especially if you wash your quilt.
I had the concern about them coming apart as well. You’re just removing a single stitch generally in two spots to make the spin. Most likely the piece will be quilted and will help hold things together. I have done this on a few pieces and have had no issues.
