Been a corned beef and reuben fan my entire life. I have never tried coleslaw instead of sauerkraut, but I am intrigued to try it. Mine will still have swiss though, because I really like it.
your video was simple and right to the point. Thanks. I just so happened to buy the 6 quart by chance and wanted to make corned beef brisket chowder so i needed a vid on what to do with the meat and my instant pot to boot for a fast seamless easy meal.
The last silverside/ corn beef that I cooked in an instant pot/ type of pressure cooker, I soaked it and changed the water 3/4 times to lower the salt content. Then I sauted it and cooked it for 1.5 hours with 2 cups of water, let the pressure drop rather than releasing it . Very tender but still carved nicely with a very low salt content. I just took a best guess on how to cook it in a pressure cooker. I normally soak and then use a slow cooker. I have a electric usage monitor and the pressure cooker used less energy than a full electric kettle. So extremely economic.
I mix my sour kraut with thousand island dressing and heat it on the stovetop for my Rubens. The only way my son will eat kraut, is with thousand island. He want touch plain kraut...lol. He is a 32 year old man. He loves his Ruben sandwiches.
@@RickMammana I love my instant pots. I use the 8qt more than my 6qt one. Yesterday was the first for cooking Corned Beef. I went looking for videos more for cooking times, than know how. After I put mine on yesterday, videos on Corned Beef popped up in my playlist. Yours being after the fact. I had peeped mine, just as yours, using two cuts of meat. Only difference. I opted for 70 minutes of cooking time with 15 minute natural release before quick release. I added garlic powder to my water and a large valdaya onion quartered. Placed onion on rack with Corned Beefs on top. Removed onion wedges and meat before adding carrots, small gold potatoes whole and ruff chopped carrots. Cooking veggies in remaining liquid for 12 minutes. Delicious 😋 Today, is homemade Ruben sandwiches. With frozen onion rings cooked in air fryer. I just subscribed to your channel. Have a blessed weekend.
Great Video Rick :). Which pressure cooker do you like best? Cuisinart, or the Instant pot? I have a pressure cooker XL. That thing is horrible it broke down in only 2 months of use. I am currently looking for another pressure cooker, and would love to know your opinion. :)
+Swtluna Hi, I like the Cuisinart the best so far. Just started using the instant pot and it seems real good so far. It might end up being my favorite soon! :)
Rick, after I make my corned beef like that I put potatoes ,carrots and cabbage in that juice and pressure cook so the veggies will absorb some of that corned beef flavor. Sometimes I also smoke corned beef for awhile before I put it in the pressure cooker with water and the seasoning packets. Try it you will like it.
Thanks for the vid. I just pulled my insta out of the box and did the initial steam clean of the pot. Yours was the first to show which buttons to hit, Ill be having mine with potatoes tonight and tomorrow on white bread with mustard tomorrow. Thanks again!
Update, we just had our dinner. I did mine with 3 cups of water and one beef bullion cube . 70 minutes on manual. It came out more the sliced consistency of a roast. It wasn't so much for tender but tender for a roast consistency. Cooked potatoes and carrots after in the broth for 10 minutes. All in all a good dinner with some leftovers from one brisket. I saved it to fry up with country potatoes and make some has tomorrow. Curious if I should have gone longer or less time to get the 'fork tender' feel.
Hi, I googled meats to use for chili and some people said to use beef brisket and chorizo, maybe you could try a brisket chili recipe in the instant pot.
I tried to eat my TV when you were cutting the salt beef. I like your no nonsense approach - you cook, you eat - end of. Keep up the good work, please. Thank you for posting.
Alton Brown was the first person I heard say make sure you throw the spice packet away in the trash but I'm going to give you an inexpensive replacement that Wegmans itself sells McCormick's pickling seasoning trust me just try it I have to give credit to Martha Stewart for the first recipe that I saw with that as an ingredient. After hearing Alton's tip I would buy each individual spice to make the mix that sounds expensive but over a long run isn't but once I tried McCormick's pickling spice I never looked back it just simply creates the most delicious taste possible., and it's pre-mixed and inexpensive, one $3.XX container will cook 3 to 4 corned beef roasts.
Corned beef brisket point cut has disappeared in the stores and Wal-Mart stopped making their Great Value brand for the less rich and now only sells Groebel brand which has only flat cut for $5/lb and the pkg hides that there is a line of fat between two thin briskets connected so it is not as lean as the flat used to be. To corn your own beef brisket it has so much waste fat it costs as much as pre corned. At least corned beef is not as much salt as it was in the 60's because I remember having to change the water and continue boiling it. When I was a teen corned beef brisket was only 15 cents per pound!
You know how to make a sandwich and are willing to do what it takes to get there. Keep up the good work Rickers. Neither snow nor rain nor heat nor gloom of night stays this food trail blazer from the swift completion of his meal. You're the Dan'l Boone of epicurious delights. You're wife would be Mingette. Leave no sandwich behind and take no left overs. Just eat 'em. Good vid dude, yummy sandwich. Breakfast!
Hello I have 2 briskets that equal a little over 7lbs I would like to cook. How long would I need to cook those for in the pressure and how much water?
I just made a little over 8 pounds. I went for 100 minutes on high pressure and added 3 cups of water. It was delicious, that video will be on my channel in about an hour or so. :)
Have you found that you really have to double up the water for recipes like this?? would 12 ozs or so been enough?? Looks good. I might have rubbed in the spices before putting the meat in the pot, and maybe also rubbed on some mustard. Would have been neat to try that with one of the two, then compare.
+Mindspring Yahoo Yes putting spices on first would have been good. They might have been more infused that way. I'm always experimenting and trying different ways. Like with water amounts and flavors. Thanks!
So at the 6.24 minute mark or thereabouts when you flip the bread, the piece at the top of the pan and photo looks like the face of a man, eyebrows, nose, and a beard, pretty cool and yum to that sandwich. I have a corned beef cooking in my crockpot today, i can't wait to have a bit later today.
Good stuff Brother! I always open the little spice packet into my mortar and pestle and crunch it up real fine before rubbing it into the meat. Then I rinse out the package with a beer and dump that in. I never rinse the corned beef cause I like the extra spice. I have never made it in a pressure cooker though, it has always taken hours on the stove top. I like the way you do things, I will be looking for more of your recipes. Rock on, check you later! (Give that doggie a scratch from Fatchuck)
Do you always use the Quick Release on tougher meats? I feel like a chuck or pork butt is more tender when I let it release pressure on it's own. What's your opinion? thanx
If you take those briskets, baste them with oil, And Place them onA charcoal grill, Crisp the meat a bit, You would get something totally and completely awesome
If y’all want briskets on sale right now is time go to the store. After St. Patrick’s Day the price gets cut in half with at least a month left on the best buy date
Hey Rick. Thank you for the great vids. I just have 2 questions? For the instant pot how many minutes per pound and how much water do I put in per pound? I have a 2 pound flat cut corned beef brisket that I'm going to make for st. Patty's Day and I was just curious thank you in advance.

You made this a few years ago but I'm telling you my Wegmans this Saint Patrick's month has insanely lean corned beef which I despise I'm buying the point or as they're calling it round cut and they're still next to no fat on it it's pure blasphemy and it's absolutely ruined my recipe. In 2019 do not buy Wegmans corned beef unless you absolutely love zero fat in your corned beef, which hopefully you don't not because I don't want you buying something from Wegmans but because come on fat is flavor. not going to lie that was the most funny informative commentary I have ever watched.

Def with coleslaw yum
Hi Rick, you are the BEST!!! Thanks to you I learn how to make Corn Beef. LOL 😊
Excellent! I'm glad you like watching! 😊
I can't stand sauerkraut so I never even considered trying a reuben but you make a compelling argument sir.

Ohhh hell ya in the process of making this now with homemade sauerkraut.
👍🙂👍
You mentioned that if you used one package of corn beef you used 2 cups of water is the time on pressure still 90 minutes?
I guess if that's what I said. I'll have to watch it again as this was a while ago. Thanks for watching!
Looks good!
Thanks! :)
Why not just freeze some??
I use 1 12 oz bottle of beer as the liquid comes out succulent and delicious

I'm gonna do this today! Is it stl 90 mins with only one brisket?
Yes I'd go that long to make it tender. Sorry I didn't answer sooner you probably made it already.
Do you always use the Quick Release on tougher meats? I feel like a chuck or pork butt is more tender when I let it release pressure on it's own. What's your opinion? thanx
+Dallas Breault Hi, Sometimes I use the natural release if I'm not in a hurry. You're right it does add to the tenderness of tough meats.
Made it your way with one big tweak that made a world of difference. Used apple cider vinegar instead of water.
+Nick Pecoraro Excellent!
Or use 1 cup of Guinness...
I use apple juice gives the corned beef, carrots, and cabbage a wonderful flavor.
I have never eaten corned beef or a reuben sandwich no one will eat it but the old man
