- SMOKED Beef Short Ribs With Red Chile Sauce In A Pit Boss Lexington 500 Pellet Grill. I started to just do regular beef short ribs, then decided to braise them in red chile sauce, and I'm so glad I did! They were fantastic! However, if you don't like red chile sauce, definitely use some beef broth and enjoy them the regular way. These went for an hour and a half at 250 degrees, and braised for an hour and a half when they reached 201 degrees internal temp. Thanks for watching!

Hey Kevin!! Im so behind in videos as you can see...Hahaha. I didnt know it was difficult to find dino ribs. I think I have seen them somewhere here, but I can't remember which store. The ones you got looked really meaty. I love the idea of cooking them with red chile sauce! They looked very tender and delicious! I hope you had a wonderful Easter!
Yeah, for some reason, NM doesn't think we like quality cuts of meat... Costco is my best bet, so I stop in when I'm down in Albuquerque. But they also don't carry Dino ribs..... I hope you have a wonderful day!😊
