  • Kattu Pongali is a traditional South Indian dish, often prepared as the prasad on Day 1 during the auspicious festival of Navarathri.     Ingredients:
    1 cup split green gram (moong dal), 1 cup soaked rice (any variety), 4.5 cups water, Himalayan salt (to taste), Clarified butter (neyyi) (quantity as desired)
    For Tempering:
    1 tablespoon cumin seeds, 1 inch piece of ginger, diced, 2 green chillies, diced, 20 cashew nuts, 20 black peppercorns, 3 whole red chillies, A handful of curry leaves and A pinch of asafoetida (hing)
    Prepare the Ingredients:
    Rinse the soaked rice thoroughly and set aside.
    In a heavy-bottomed pot, dry fry the split green gram on medium heat until fragrant, stirring occasionally.
    Cook the Pongali:
    Add the soaked rice to the pot along with 4.5 cups of water. Season with Himalayan salt to taste. usually 2 whistles enough in cooker.
    At this stage, you can add more water if you prefer a slightly more liquid consistency, keeping in mind that the pongali will thicken as it cools.
    Prepare the Tempering:
    In a separate pan, heat your desired amount of clarified butter (neyyi) until hot.
    Add the cumin seeds, diced ginger, green chillies, cashew nuts, black peppercorns, whole red chillies, curry leaves, and a pinch of asafoetida. Sauté the mixture until the spices are aromatic and the cashews are golden brown.
    Combine and Simmer:
    Pour the hot tempering over the cooked rice and green gram mixture. Mix well to ensure even distribution of the spices. Let it simmer for an additional 5 minutes.
    Serve:
    Serve the Kattu Pongali hot, garnished with additional cashews or curry leaves if desired. Enjoy this comforting dish as a festive prasad or a hearty meal!
