I made the chicken/turkey gravy recipe without the browning sauce (had none in my pantry). I also substituted 1/4 tsp. Pride of Szeged Chicken Rub for Paul Prudhomme's poultry seasoning, and 1/4 cup heavy whipping cream for 1/4 cup heavy cream. It was delicious! The best poultry gravy I've ever tasted. I admit I simmered the gravy for about a half hour, but I like a thicker gravy. I have never gone wrong with any Papa G recipe I've tried. I frankly don't know how he does it. Gordon Ramsey, you've met your match!

Just made this an hour ago. I dropped my spoon in the pan while sautéing the butter, onions and spices. Out of curiosity I licked the handle on the way to the sink. Oh the flavor! I was a tad short on chicken stock and I didn’t use browning sauce as I stay away from caramel coloring, but I knew from that prior little taste that it would be good anyhow. Taste: Oh. My. Gosh! This will bring life to just about any chicken dish. Even if you’re not doing keto or low carb, this gravy would be superb over any kind of potato: hash browns, French fries, mashed & smashed potatoes, you name it. I’ve been doing keto for over a year and have tried so many things and have had many disappointments, but this recipe DELIVERS. Thank you so much for sharing. I appreciate it!

My Mom used that browning sauce all the time only thing is, it's very high in carbs :( Of course, I didn't know that till I bought some. I ended up bringing back to the store & I was asked what was wrong with it? I told them it's full of carbs lol
Yes, but only add a little at a time. Another option is to cook it longer and let it reduce. If it gets too thick (by accident of course), just add more stock.
Hi Bunny! It may depend on what form you have... whole husks or ground husks I wouldn't recommend. It would change the texture giving it more of a gritty nature. However, you may attempt the powdered variety. I wouldn't know the ratio or if it would even be comparable. But that would be your best bet.
Made the mistake of using whipping cream instead of heavy cream, since it's all I had at the time. Required much longer cooking time, which reduced the yield. My fault! Also substituted tapioca flour for xanthan gun, which also may caused slightly less thickening.
Hi Jeff. The cream difference wasn't the culprit... it was the lack a xanthan gum. If you're going to be cooking a lot and you're focus is low carb, I highly recommend you pick up some xanthan gum. A standard bag is only about 8-9 dollars and will last a very long time as you'll only use a teaspoon or less most of the time.
@@PapaGCooking Will do. When I doubled the amount of tapioca flour, it worked well and I want to use it up since it's a big bag I don't use often. This gravy was so far beyond delicious. Used it on keto pork chops and also your mashed cauliflower recipe and it was heavenly. Will make bigger batches and freeze them in cubes. Thank you.
@@PapaGCooking Made a huge batch (triple the amount here) and used xanthan gum this time. Yep, made a huge difference. I froze the gravy in large ice cube trays for future use.
Papa G's Low Carb Recipes I've never cooked with xanthan gum before! I didn't know if it loses its viscosity / texture with freezing /reheating like cornstarch can

Xanthan gum can currently be found on amazon for around $6 for 8 ounces. My 8 ounce bag has lasted what seems like forever (and I do a lot of experimenting!). At most you'll only be using a half to one teaspoon per recipe. But to answer your question... Yes, there are other thickeners... a natural thickener is to let your recipe reduce via evaporation. This can take a lot longer and will change the flavor. For example, only the moisture is being lost, but the salt and other spices remain. So as it reduces, it can become saltier and the spices more pronounced. Two other thickening agents I've used are arrowroot and glucomannan powders, However, you'll find those products are similar to xanthan gum in price and I find (especially with glucomannan) tend to bring about more of a gelatin like consistency rather than just a thickening. Believe it or not, onions are very low on the glycemic Index chart. I think they score a 10. To put that into perspective, asparagus score a 15. Most vegetables have natural sugars, but not all sugars are equal. Also, this recipe only has 3 Tbs of onion. If I'm not mistaken, it makes 2 cups and a 2 Tablespoon serving is less than half a net carbohydrate.

as a thickener, I prefer xanthan gum. Psyllium husk has it's place. But as a thickener for soup, gravy, etc., It's my favorite.
