    I haven't forgotten beef marrow, love roasting marrow bones.

      Same. I prefer them canoed, generously seasoned with salt.
      If you want a decadent breakfast, I sometimes mix it with rendered lard and store in the fridge. Then use it instead of butter for scrambled eggs.
