HEARTY MEXICAN BREAKFAST | SPAM and Eggs Rancheros, Refried Beans, Homemade Flour tortillas ❤

- This is a delicious Mexican Hearty Breakfast, this dish brings back many childhood memories and it is a family favorite. Spam has been around for years and it can be prepared so many different ways but mixed with eggs in wonderful salsa ranchera takes it up to the top of the list as one of my favorite breakfast dishes. I love to serve it with refried beans and homeade flour tortillas, if you've never tried it, I hope you consider it because I know you will love it. ❤️
INGREDIENTS FOR SPAM AND EGGS RANCHEROS________________
1 12oz can of SPAM (cubed)
6 large or Xtra large eggs
4 small green onions (chopped with green part)
1/4 C. chopped onions
2 large serrano peppers (slices)
1/3 C. water
Salt (very little, SPAM is salty)
Pepper to your liking
Freshly grated Colby jack cheese or other
REFRIED BEANS___________
Pinto Beans as needed (cooked)
3 Tbls bacon grease or shortening
2 tsp Tomato flavored chicken bouillon
FLOUR TORTILLAS___________
3 C. All purpose flour
1 3/4 tsp salt
3 Tbls shortening
1/4 tsp baking powder
1 C. hot water (not hot to burn you)
*you can add a little bit extra water a little at a time if needed

I make Migas, beans and salsa for breakfast all the time on weekends! Always have homemade breakfast burritos in the freezer for my husband's weekly breakfasts. He eats every weekday on the way to work. Saves money for him.

I'm definitely going to make this. It looks delicious. I learned how to make tortillas from watching your channel and now I can't eat store bought. I don't know why slapping them while they are on the skillet makes them puff up, but it works. I love seeing you back in your sunshine kitchen! I make this, but also add sliced onions along with the spam, then add eggs, scrambled n mix but put a can of mild or orginal rotel can. Depends how spicey we want it..

Oh my goodness Sra!!! This breakfast brings me back to my childhood. The only thing different are the flour tortillas. We didn’t eat flour tortillas. We always had corn tortillas. Rachel, I made the same breakfast this morning, and when I was browning my spam, instead of oil, I used bacon grease. OMG! The flavor was out of this world!!!!!!!!

Hello prima, your breakfast looked delicious. My husband would love it. But my favorite was the refried beans, but without the onions I my beans with cheese and the bacon fat and a slice of bacon. Spam is ham. Most people misunderstand. Once you get it, it brings out the flavor. Cold spam is not as good as fried spam. It's made with pork shoulder. Pity spam get a bad rep. I love refried beans. This is breakfast at our house! Rachel I love your cast iron skillet and comal! I also love your idea of making the flour tortillas masa and putting in the fridge overnight!
Enjoy every bite my friend...I love cast iron cookware, they are the workhorses in the kitchen...after kneading your masa well let it sit about 30 minutes then make your balls and cover them with paper towels then plastic wrap so they don't get wet, then refrigerate, then dust with a little flour the next morning and they will be perfect. I’m sharing a family tradition with you. I grew up in Yuma Arizona and every Christmas Eve my mom made rolled tacos with Spam and tamales. If you haven’t tried Spam tacos please do. They’re delicious!!

If you open a restaurant, I would be your best customer. That looked so good! My mother use to make us kids SPAM and eggs for breakfast when I was a kid. Loved it.
It's true about the homemade tortillas. Once you've had fresh homemade tortillas, it's hard to find store bought that you can even eat. Fresh are so wonderful. Hot off the pan with a dot of butter....soooo good. I like the idea of making them up & putting them in the fridge for the next day. I wonder if the dough balls could be frozen? I usually only need a very few at a time so I don't make them fresh as much as I'd like to.
