    Nigerian Coconut Fried Rice Recipe and Turkey
    Ingredients:
    • 1 cup Basamati Rive
    • 1 can (400ml) coconut milk
    • 1 cup chicken broth (or water)
    • 1 table spoon of coconut oil
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 teaspoon grated ginger
    • 1 cup mixed vegetables (carrots, peas, green beans, bell peppers)
    • 1 cup cooked shrimp
    • 1/2 cup sweet corn
    • 1 teaspoon curry powder
    • 1/2 teaspoon thyme
    • 1-2 stock cubes

    Instructions:
    1. Parboil the Rice:
    ◦ Rinse the rice thoroughly under cold water until the water runs clear.
    ◦ In a pot, add the rice and enough water to cover it. Parboil the rice for about 10 minutes until it's slightly tender but still firm (al dente). Drain and set aside.
    2. Prepare the Coconut Base:
    ◦ In a large pot or deep pan, heat the vegetable or coconut oil over medium heat.
    ◦ Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions are translucent and fragrant.
    3. Cook the Rice:
    ◦ Pour in the coconut milk and chicken broth (or water). Add the parboiled rice, and stir well to combine.
    ◦ Season with curry powder, thyme, and stock cubes.
    ◦ Cover the pot and cook on low heat for about 15-20 minutes, or until the rice absorbs the liquid and is fully cooked. Stir occasionally to prevent burning. If needed, add a little more water or broth to cook the rice completely.
    4. Add the Vegetables:
    ◦ In a separate pan, stir-fry the mixed vegetables, sweet corn, and shrimp or chicken (if using) in a little oil until tender. Season lightly with salt and pepper.
