    Shrimp Zucchini Pasta Recipe
    Ingredients:
    2 medium zucchinis (spiralized into noodles)
    1 lb (450g) shrimp, peeled and deveined
    2 tbsp olive oil
    3 cloves garlic, minced
    1/2 tsp red pepper flakes (optional, for heat)
    1/2 cup cherry tomatoes,
    Salt and pepper to taste
    Fresh parsley, chopped (for garnish)
    Instructions:
    Prepare Zucchini Noodles:
    Spiralize the zucchinis into thin noodles. If you don't have a spiralizer, you can use a vegetable peeler to make long, thin strips.
    Set the zucchini noodles aside.
    Cook the Shrimp:
    Heat 1 tablespoon of olive oil in a large skillet over medium heat.
    Season the shrimp with salt and pepper. Add them to the skillet and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
    Sauté Garlic and Tomatoes:
    In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for 1-2 minutes until fragrant.
    Add the cherry tomatoes and cook for another 2 minutes, until they start to soften.
    Combine and Flavor:
    Add the zucchini noodles to the skillet with the garlic and tomatoes. Toss the noodles for 2-3 minutes until they begin to soften.
    Return the cooked shrimp to the skillet and toss with the zucchini noodles.
    Stir in the lemon juice and red pepper flakes (if using). Adjust seasoning with salt and pepper to taste.
    Serve:
    Transfer the shrimp zucchini pasta to plates. Sprinkle with grated Parmesan cheese and chopped parsley, if desired.
    Serve immediately and enjoy!
    Tips:
    If you prefer a softer zucchini noodle, cook them a little longer, but be careful not to overcook, as they can become watery.
    You can add extra vegetables like bell peppers or spinach for more flavor and nutrients.
