Thanks Raymond. Here in San Antonio, I can get them from Culebras Meat market or Granzines meat market in New Braunfels. Each location requires about a week's notice. They can be ordered online but will be quite a bit more expensive.

Awesome video! Could you have finished at 450 in the smoker instead of the oven? What would be the difference? Thank you!
Great question Furnace. I could've finished at 450 in the Traeger but it would've taken longer to crisp the sides while risking drying out. Because of the convection, 450 is different in the oven. Maybe next I'll start crisping 45 mins earlier in the Traeger. Thanks for watching.
