Ingredients
black eye beans 2 pounds
palm oil 1 cup
smoke mackerel
onions 2 medium size
green pepper 1/4 medium size
habanero pepper 1
ginger and garlic paste 1tbsp
salted tilapia (koobi) thumb size
Maggie stock cube 1
rosemary 1/2tbsp
salt to taste
shrimp powder 2 tbsp
carrots 1 medium size. - Хобби

That looks amazing. Getting good ripe or "red-red" plantain is hard here in Ireland. Often, they look ripe and red on the outside, but the inside is still as hard as a green one.

@@DAKTY4YOU i found them and made it. The secret is the smoked mackerel in the bean sauce. I used fish sauce too. Absolutely delicious. Palm oil is also a must...it makes it look right.
Whenever you get a plaintain put it in your cupboard until the skin is black and looks like its spoiled. The plaintain flesh should be soft in your hand. Slice & fry and you will have sweet plaintains EVERY time. I hail from the US VIRGIN ISLANDS 🇻🇮 and I live in Florida and still have to do this.

That looks delicious. I'm 62 and raw vegan. I avoid oil due to controlling my blood pressure by diet rather than by medication. So I would leave out the oil, mackerel, and the shrimp powder for these reasons. Otherwise, I think I can make a delicious vegan, oil-free version of this recipe. Thank you.🧡
