This is our plant-based twist on the classic Middle Eastern kofte using red lentils, oats and spices, which wev serve on a bed of zesty giant couscous. Yum!

I have tried a few recipes before where you only soak the lentils and then blend them. I always found the lentils tasted raw and hard. This is perfect as we cook before hand and also takes less time. Kids love them too. Thank you so much ☺️

Always leave it to soak 2 hours.
Then, consume it with yoghurt or salad. Sorry, not couscous..(too dry combination)
