You should never consume cheese that has shown signs of mold. The roots of the mold, called hyphae can burrow deep into cheese while showing none of the fruiting bodies, what we commonly call mold. Never risk it!
Whatever you do, do not listen to mash’s tips on cheese or try to salvage any food infected with mold by cutting off the contaminated part. The hyphae or roots are already growing in it, which means that the toxins are everywhere
This is true for bread. But are you sure it's also true for hard cheese? As I understand it, the moulds on the surface of hard cheese don't root very deep into it. And they tend to be quite harmless to healthy adults anyway.

I found it very bizarre that the USA date system is not federally dealt with . That in itself generates so much confusion. In Australia we have 2 dates a best before and a use by . the use by means that it has to be used by that date, unless it has been Frozen or it gets thrown out. Best before means that the contents won't be at it's best but it's unlikely to do you serious harm if you eat it after the date but even best before food doesn't last forever. So I use 6 months as a guideline . if it is 6 months past the best before then I usually throw it out
