A real scotch pie is one of the best-tasting things on the planet. My mom used to put peas on top...two ice cream scoopers of mashed potatoes...and dinner was served. Ice cream scooper for mash so everyone gets the same amount...I still do it. Thanks, Mom!
My Mum used to do this for me after I was diagnosed with Type I diabetes when I was two-and-a-half, the scoop she used held exactly 2 ounces of mashed potato. Miss you Mum
Hi Paul, you are da man. I make lots of Chicken Mushroom pies and Beef pies, the 5” diameter hand held pies. That is what we ate in South Africa. Been living in Hunteville, Texas for the past 30 years.
It must be 50 years since I last had a proper bakers Scotch Pie, my gran lived in Newcastle, but I never knew them with anything other than mutton in them!
Tip: next time you tie the not, put a double twist in the first part of making a knot. It won't slip and you don't need 2 people to make a knot. You make a second double twist in the twine to finish the knot.
I was always given to understand that a Scotch pie was made with mutton.. Indeed, I've tried many such, but I must defer to the champ! Paul's version does look delicious though. Right up my street, perfect with mash, peas and perhaps a bit more of that lamb gravy. Happy New Year everyone! 🥮🌟👍
Pretty awesome to see this! Really nicely produced video - makes me want to visit Scotland and attend one of those games just so I can get a Scotch pie. If I'm being honest thought I do have two criticisms - while you have Andrew Chisholm in your kitchen you should find a way to make him more a part of the baking process than just having him hold a string and if you're talking about trying the pies with Andrew you probably should have a shot of actually tasting them or we might think something went wrong...
Without going into details, the video tries to report how the Scots make their feet, I particularly like the story, not the result of whether Paul succeeded or did not succeed, everyone there! Thanks for the series! ✌️😋🤤👏🤝🤭🤗👍
You cannot beat a mutton pie, I only get the chance when I holiday back where I grew up in the South of New Zealand very few of the hot crust left any more, mainly all puff, miss the fat dripping down my chin.
I haven't had mutton since I was a kid. To be honest I can't remember what it tastes like. Nowadays I don't think you can even get it here in Australia.
At 6:30-the look of "OMG you're not doing it right" LOL j/k. Its Paul. Come on. Id eat jam on cardboard if he served it to me with those mesmerizing eyes.
He's looking at that thinking, no competition for my trophy here! I'll give it a try when I can source some lard that doesn't taste weird. Might whack the crust in the dehydrator or a really low oven for a while to cure a little faster than 3 days.
I've been a professional baker for 40+ years and that dough was NOT completely cooked. Talk about a soggy bottom, they didn't eat it on camera because it was raw and gummy.
I totally agree , was my thoughts too , when he removed the baking parchment I thought that ain't cooked right , should of cooked it without the parchment , I've also worked on Tv cooking , And it's not as easy as it looks with the camera's pointing . I've got to make 50 next week for a function , Just hope mine turn out well . 🤥🤥 Good video Paul . Can't be perfect every time mate.👨🍳👨🍳
Wrapping the pie in parchment seems to have inhibited the browning of the case. I would prefer to cool the pastry longer to have a more rigid case which can then be egg washed and browned.
Growing up in the 60's in England a Scotch Pie was mutton , never ever had one made with beef. Invented in England and perfected by the Scots ? I think not 🤣
The Scottish pie maker is not impressed by Paul’s pastry case form! The end result is not a Scotch pie, the pastry doesn’t look cooked and it’s dripping in grease. It doesn’t get my vote!
This reminds me of pork pies. Shortcrust pastry is not as easy to make as made out here and the pork pie has more stages with the bone jelly layer being before the meat filling. Seems like a cross between the pork pie and a Cornish pasty.
Looks good. Delicious. But I’m pretty sure if Paul saw that pie on the Great British Bake Off with the oozy top and rounded bottom he would not approve. No handshake for you. And didn’t even prove there’s no soggy bottom.
ha ha ha, I thought they said the machine was called a wobble. Now where can I run around to, so I can buy some lamb gravy? I watched the whole video and they did not show anyone actually tasting the pie or their reaction to how it tasted? WHAT !
With my hand on my heart, I can honestly say that was the worst pie recipe I have ever seen, hahahahaha only joking. That was absolutley fantastic. Cheers.
I had to rewind the video to make sure I’d heard the Scottish baker correctly…’beef’? I’ve never heard of a scotch pie being made of beef. Why is it called a scotch pie if it’s not made with lamb? It’s just a beef/steak pie.
The top of the pie is way too brown (bordering on burnt) and the bottom crust is a greasy, sloppy, underbaked mess-you should have paid more attention to Andrew's technique.
delicious 🤢🤮?? First off the pastry sides are not cooked properly. If you can't let the pastry dry for 3 days as the man said, but insist on cooking fresh pastry straightaway then put it in a tin for support and heat. Wrapping it in paper is a bad idea. A pathetic effort and an insult to proper pies.
Paul a pie maker your not that’s a bastard English pie Get Cheryl from. What’s for tea to show you how it’s done Please don’t go telling people that yours is a scotch pie it will put them off
The baker is just staring down Paul's crust shaping skills like, "that's cute."🤣🤣

I love to see Paul Hollywood bake
Brilliant I love scotch pies
Awesome video, Paul. You just need to eat what you cook (at the end of the video) and you've then got the perfect format.
So nice my friend
Lovely - the things I learn on youtube!!! AMAZING!
Great video, looks divine Paul❤
Great video and recipe. I love how quiet Andrew was throughout. He never gave away a single detail of what he does. Sometimes silence is golden . 🤍

I like brown sauce on darned near anything. This looks great.
Love this channel. In a short period of time…get to see some history, another baker’s super skill and Paul’s version. I’m subscribing!
Much better Scotch pie recipes than this on RUclips
His pies are magic, nothing more to say.

Look up a surgeons knot. Super fast and doesn’t slip. Used to tie off important parts quickly. Knit is made with a fore finger.

A proper Scotch Pie is served with baked beans on top, ask any army chef 😂
Looks yummy. Seems easy. Hows it taste? You need to show us!
I love a good Scotch accent. It’s barely understandable English. Fun! Great video!
How in the world did it take me so long to find out you have your own channel?
Thanks Paul.
Love your work.
The bowls are beautiful!! I wish I knew what company made them.

I had a Scottsman correct me once. "No laddie, Scotch is what you drrrink!". These look interesting.
I LOVE scotch pies! They are a rarity where we live! Do you mix beef and lamb mince or do you just use lamb?
Impossible to watch this without subtitles 😂😂
Jock didnt look impressed. But you still scored a like.
Love it
I noticed the video cut off before Dan tasted Paul’s version. Must not have been a roaring success. LOL
Hello Paul!!😊
Paul do you have a Yorkshire pudding recipe?
You cannot beat a mutton pie, I only get the chance when I holiday back where I grew up in the South of New Zealand very few of the hot crust left any more, mainly all puff, miss the fat dripping down my chin.
I haven't had mutton since I was a kid. To be honest I can't remember what it tastes like. Nowadays I don't think you can even get it here in Australia.
@@richardlionheart3935 It's the same here in Auckland, only seems to still survive in the bottom of the South Island.
look delicious Paul...😋😋
If you want a nice crispier top crust , sprinkle lightly with a quality sea salt . I use Maldons . Warmest regards Chef Ray o7.
I was looking forward to them tasting the pie and got disappointed 😞
Marvellous. I hope you ate the paper as well…..nothing to waste there.

Paul H: No one likes a pie more than me
Am I the only one that heard it as a dirty joke?
Delish
the scotsman looked woefully unimpressed 😌
Paul should have had Andy the expert making the pies with him, so he can learn.
That's how Julia Childs and Martha does it.
Needs to have about 10 minutes in the over at the end without the parchment paper to dry it up a bit and give it some crispness in my opinion
Thank you for your lovely compliment. I hope my recipe was able to help you.
Looks delicious like you 😋
I love lamb / mutton / pork better then beef.
I like how you didn't show the part where the bottom of your pie was rotted out from all the grease and dragging meat over your counter lol
Super..ce faci ❤
Growing up in the 60's in England a Scotch Pie was mutton , never ever had one made with beef.

The baker looks like played right wing forward in rugby. Cauliflower left ear but not right.
What app pit you eat Paul
🥰❤️🥰❤️
Chisholm has a look on his face like: Bloody hell man, you're destroying my recipe! Put your own name on that pile.
OI THAT OVEN LOOKS LIKE A GERMAN MODEL !
English Northumbrian pipes on a documentary about Scotch pies? Honestly, independence can’t come quickly enough.
Damn dude, a pud is a totally different thing over here in America, and most guys aren't going to want to eat one.
What was it Hollywood used to bake? He'd struggle heating up a Greggs.
I love Scotch pies, but you don’t seem to get them in England anymore. But I thought they were mutton not beef? Harrods used to do really good ones.
Is that a farmer’s tan, Paul?
The Scottish pie maker is not impressed by Paul’s pastry case form! The end result is not a Scotch pie, the pastry doesn’t look cooked and it’s dripping in grease. It doesn’t get my vote!
Agreed. I think that it looked pale and squishy. I think unwrapping it for the last several minutes and giving the sides of egg wash also might work.
Or maybe parbaking the shells first.
@@brianwooton1992 or like the professional pie maker leave the pastry case for a couple of days to dry.

Mutton has to be the filling in a Scotch Pie.. but then the family originated from Achtermachty.... and yes - grease running down the chin!
Andrew's ears look like he was a forward on the rugby pitch before he settled on baking.
Looks good. Delicious. But I’m pretty sure if Paul saw that pie on the Great British Bake Off with the oozy top and rounded bottom he would not approve. No handshake for you. And didn’t even prove there’s no soggy bottom.

move over Mc Donals
pie tins?
So in a nutshell, what is the filling?
7:34 mutton.

I am sorry, this is taking too fucking long to get to what I want, how to make these things at home.
Oh come on Paul.....really, the sides were not crisp enough, they looked uncooked! That’s so disappointing !
Soggy boggy bottom pies by Paul
Crust looks under baked
I would have blind baked the shell on the glass ramekin , maybe black pepper or cayenne in the filling

The worst looking scotch pie i have ever seen but then i never recon him as a baker
Um, the pastry doesn't appear to be quite done. Perhaps a little prebake or drying it first and don't use the paper and it might come out better?
