Maybe nowadays they blow up the Peking duck to make the skin crispy. Actually, that's the method the Cantonese uses to make crispy skin chicken. The traditional Peking duck is done by force feeding the duck to fatten it so the fat underneath the skin makes the skin crispy. Ask Steve to tell you all about it.
My fav dim sum is chicken feet, the two types of tripe (this one was omasum tripe but i think i like the honeycomb tripe more) and anything braised with tendons!

What happens to the toenails on the chicken feet when it's cooked? Do they fall off? Can you use them as holders like shrimp tails? Do they soften up and get eaten? Do they get clipped off with toenail clippers before steaming? Just wondering.

This is my preferred spot for Chinese dinners but not dim sum. Maybe I don't know what's good. 😁 I tried their dim sum when they first started serving it and thought it was ok. I gave them a second chance a couple years later because I thought it could've gotten better. It's alright. Try their dinner sometime. Their Peking duck is really good.

I absolutely love Asian food and Mexican food-and cooking it. I swear I was Asian/Mexican in a former life. What I do NOT understand is why some things are charred and others not. Ex: spareribs. Why not roasted at last moment? SK Seafood and the chicken. Why steamed instead of roasted? I have multiple donabes and absolutely use them to steam but more veggies and FISH! I assume that American's like char more? I'm sincerely asking and curious.
