    I understand the burner issues on glasstops. My glass top stove big burner is horrible but small front burner stays pretty consistent but it gets too hot on 5 for sugar gotta keep it on 4. So I bought a hotplate to fix the issues. I always wanted a glass top but now not sure that was a good idea since making candies.

    Measurements of ISOMALT and water.??

      There's no specific measurements. The more water you use, the longer it will take. I just pour enough water in and mix it up so that the isomalt is wet, but I don't use very much because it just makes it take longer to boil off. When you're cooking the isomalt you're basically evaporating the water out of it, so adding water in is just to slow down the heating if you need more control over it. Some people who are really good with sugar work don't even use water, but that's risky because you can burn it pretty easily if you don't know what you're doing!

      That usually happens when the isomalt isn't cooked to a high enough temperature, or if it's really humid outside.
