I got the Kaffelogic Nano 7 sample roaster a while ago for home use. It’s been fun and instructive to cup the results.
My first challenge was a dry process Ethiopian which was super lively, but also had a negative flavor. Eventually, we dialed it out. Now I’m working on a very washed Ethiopian with the opposite issue - it’s very subtle, so we’re trying to get more out of it.
Mill City Roasters posted an article that recommended a fast dry time and consistent first crack, and then varying development. Two had the same end time as the reference roast, but one is end 1C hotter and the other 1C cooler. Next, keep the same end temp, but drop 20s earlier or later. We blind cupped the reference roast plus two cups for each of the four variations. Even with those subtle changes, we could clearly identify the changes. No surprise that the longer development time brought out more flavor while keeping the balance of our reference roast. Now I need to determine how long I can push the development without a crash or some other problem.
To start cupping was a bit intimidating. I’m glad we made the leap. It’s taken my understanding of coffee to the next level. And it can be fun to do with others. It’s an exploration, not a competition.
