I always make bbq with brick grill like this. One tip i can give is leave on side open. It allows air to flow in and helps the coals to keep burning.

I love BBQ, not had coal kebabs for years.
I think a few air gaps would help. You don't want to fan air from the top and move ash about when cooking.
Just a question though, is it safe to use bricks? If they're damp could they explode?

It depends on your charcoal quantity and always have to blowup with a small hand fan to make them heated,

Just a layer, its depend on how much bbq material you have.
