How to Reverse Sear Lamb Chops!! Smoked and grilled Lamb Chops.

  • Today we're smoking Lamb Chops then throwing them on the griddle for a nice sear. Come along for the ride and I'll show you how to prep, smoke, sear, and serve some tasty Lamb Chops.
    I had a harder time than usual finding Lamb Chops around town but given COVID and the meat shortages happening, I'm not that surprised (side note: stay safe this summer! Distance socially). I ended up finding a few frozen chops at the butcher. I was hoping for Lambsicles/chopsicles/Lamb pops per usual but couldn't find 'em. These will work!
    I make my own little rub for the lamb chops in the video. It's pretty simple, here's the ingredients. Just mix and shake.
    Lamb Chop Rub Ingredients:
    1 Tbsp Kosher Salt
    1 Tsp Dried Rosemary
    1 Tsp Dried Thyme
    ½ Tsp Black Pepper
    1 Pinch Garlic Powder
    I used an old Traeger to smoke the Lamb Chops to an internal temp of 140F. Then I seared each Lamb Chop for 1.5 minutes on each side on my 28 inch Blackstone griddle.
    Served with chimichurri, white wine, and risotto. Life is too good!

    I have used this method for thick steaks and am excited to give it a try for lamb chops. I like mine somewhat rare so will initially heat to 120 internal. …more later

    Try internal 120. 140 is well done. Lamb is best served mid rare.

    I’m guessing 250 degrees for 50 minutes and then searing both sides for 2 minutes each will do the trick

    Awesome technique… but this only works well with very thick chops. I also like the minimal seasonings. Lamb doesn’t need much help.

    140 before you even sear them is insanely overcooked. Yuck
