As you are cooking your boiled eggs twice, I recommend boil for 3 minutes then leave eggs in the pan for a further 7 minutes with a lid on, but off the heat, after 7 minutes drain the hot water, run eggs under cold water for 2 minutes and peel..your eggs are fully cooked but soft to the touch.. no rubbery egg. Love your recipes, I eat low carb, so I adapt your recipes to suit.

We found some fresh peas at the market yesterday as well as some beautiful eggs, carrots and new potatoes.I knew I could count on you for a recipe for a delicious dinner and we made this dish. It was easy to prepare and she just followed your instructions. An hour later we had a delicious and beautiful dinner we enjoyed thoroughly. We had a couple of slices left over which will make a fine breakfast this morning served at room temperature with a small arugula salad. Thanks, as always!

This is my report. I wanted to try this right away but was lacking an ingredient so put it off until I could make it to the store. I wasn't sure if the peas needed to be frozen when added to the rest of the vegetables of if they could thaw out a bit, so I kept them in the freezer. Since my habit is to lay the ingredients out in order so I don't skip any, the one in the freezer stayed in the freezer. However, I noticed in time and think that I recovered well. The finished product looked pretty much exactly as the still shot at 0:36, so obviously if I can do it anyone can. It is delicious (still is because I have some leftover)! The carrots add a note unfamiliar for breakfast in my experience, but since I got a late start it was more of a brunch experience anyway. I did not have a baguette, and did not feel like making one fresh, so I sliced up some tomatoes because tomatoes are always great with eggs. The tomatoes that I happened to have were the tiny ones that come in various shades of yellow, orange, and red. This made for a formidable presentation complimenting the colors of the tortilla. So never give up for want of a baguette! It seemed to me that what we generally get when we order a "Spanish omelette" here in the US may be misnamed so I did some research. It turns out that there are lots of variations on the theme, including this tortilla and what I'm used to seeing, so call it what you will. Maybe it's sort of like "chop suey" in Chinese cuisine that can mean pretty much whatever you want within some broad limitations. Anyway, excellent recipe and I'll definitely keep it in the rotation.

Amazing looking dish...I can have the stuff for them three daily meals and be very satisfied. Can you do a video for empanada gallega sometime? That was my favorite dish growing up in Venezuela with all my Gallegos friends and one of the specialty in every single local panadería.
I'm thinking green pepper may be a good green substitute, and in general trying to figure out how to throw some grilled mushrooms in there. I know that Mr. Fork is pretty mellow about substitutions, so he probably won't mind.

In America I think we would reach for a picante salsa of some sort, Louisiana hot sauce, a southern tomato chow chow, a curry and ghee, a basil rich or oregano rich thick tomato sauce, or a tomato ketchup. I would think a mushroom sauce or cheese and wine sauce would go great on it. Until discovering you channel I had only tried a Arazo con pollo, and Ropa veija as a Spanish dish..... and good Spanish wine. Think I will try this this weekend
In Spain sauces are not commonly used in food like they use them in the states, a lovely Rioja crianza red wine always goes great with Spanish food :) much love
By adding some spice (salt, black pepper, bay leave, veg cube eg.) it would have made a nice veg broth instead of ending in the kitchen sink. Btw nice recipe.
I made this. Looks great, but tastes very, very 'eggy' couldnt taste the potato at all. Personally, I prefer the potato or onion tortillas, but this would be good for breakfast, as it tastes pretty much like an omelette.
