I appreciate the good audio and video quality, too; murky video or muddled audio makes it so hard to enjoy a video like this, but you really have put in your due diligence on the production side of these videos. In this case, I can easily see making a batch of the sauce for the refrigerator and using it over several mornings for a variety of applications. I'm thinking that I may make this like you did, but also include diced potatoes to add just a bit more texture to the dish. This looks very good.

That's shakshuka except with that the eggs are poached in the tomatoes rather than fried. As shakshuka is a Middle East dish I wonder if the Moors brought it to Spain or adopted a Spanish dish and spread it into the Middle East.

In Turkey we make the same tomato sauce and break the eggs into it. Then mix it , cook for 1 or 2 minutes more and it's called 'menemen'

Looks delicious. This dish has some similarities to "huevos rancheros", which you may have been exposed to from your time in California.

I would think route was from Spain to North Africa because of the tomato sauce. I could be wrong, but I still enjoy it.

I've watched many videos but I haven't seen any meat dish yet.
When dishes are prepared wonderfully, there is no need to rely on animal meats for flavor.
in Cuban culture we eat fried eggs on rice with either fried ripe plantains or banana 🍌...this looks like a shashuka.
