  • What a hunt! Opening morning of Texas turkey season, my buddy Hayden and I got it done! We went to two places before we decided to go back and look at the land we started on. Sure enough two big ol toms strutting on a few hens. We set up and ended up calling in two different toms and got a double. My big ol tom was taken with my Airforce TEXAN SS.     this is a recipe that has been long past down in my family, and modified by each generation. My mother and my grandmother both agree that my take on the family recipe is the best so far. I typically use a 5-7qt dutch oven when cooking this recipe.
    For the stock - 64oz low sodium chicken broth, 10-20oz water (needed if you desire a runny broth), 2 carrot sticks chopped, 2 celery sticks chopped, 1/2 onion finely diced, 1-2 garlic cloves minced, flour (for coating meat), 5-6 tbsp olive oil, salt and pepper.
    For the dumplings (essentially buttermilk biscuits) - 2 cups flour, 2tsp baking powder, 1/2 teaspoon salt, 2 tablespoons lard/butter, 1 cup buttermilk.
    start by placing your 3 tablespoons of olive oil in a pan over medium-high heat. lightly coat your diced turkey or chicken breast, or whole skin on chicken thighs in mix of flour, salt and pepper before putting into the hot pan to sear quickly just to get golden brown and get drippings into the pan. After you have browned all the meat, take it out, cover it in foil and set it aside. add your 2 remaining tablespoons of olive oil to the pan and sweat your onions, carrots, celery. use a wooden spoon in this process to begin scraping the bottom as the veggies begin to sweat. Just as the onions have become translucent, add your garlic and sweat for 2 minutes longer. At this point, add your chicken broth, and all meat back to the pan, allowing to simmer for an hour, or until all meat is cooked through. While all the broth is coming to a simmer begin to prepare your dumplings by mixing 2 cups flour, 2tsp baking powder and 1/2 tsp salt. after the dry ingredients have been mixed, add in your lard or butter and cut into the flour mix. Once butter is evenly distributed through the flour mix, add in your buttermilk and combine. Once combined, lightly flour a surface to roll the dough out onto. Roll the dough into approximately 1/4 of an inch, then cut into strips of your desired length and width (keep in mind, they will swell and rise in the broth!) Once cut, lightly toss in more flour before dropping them into the broth one at a time, while stirring the pot to prevent the dumplings from sticking. Cook until dumplings are tender all the way through, serve and enjoy!

      P.s. I typically double the dumplings because my family loves them. I also sprinkle in quite a bit of flour while mixing in the dumplings because we far prefer a thick broth. Give it a try sometime and let me know how you like it. This recipe also works very well with squirrel and duck if you allow it to cook long enough to make the meat tender.

    Cut the breast into strips put some soy sauce, pineapple juice, garlic powder and ground red pepper into a bowl. Mix it up drop the turkey in let it sit over night and throw it on the Traeger smoke it for a few hours then turn it to 225 until it’s about until you hit about 175 and you got some killer turkey strips/jerky.

    Was hunting one evening by Aquilla Creek and there was a flock(20+) that roosted around the creek. Anyway one evening the flock came out and got 3 with the AR. 5 minutes later big ole bobcat come out from the tree line and starts trying to carry one of the dead turkey off. Got em too.

      There are no Merriam in Texas. They are Rio Grande's and Easterns and some cross between the two depending on where you are.

    We season the turkey breast with salt, New Mexico red chile, and a little brown sugar, wrap it in bacon and put it in the crock pot on low for several hours until the meat is tender. Best turkey ever!

    2 cups all-purpose unbleached flour (plus additional for dusting)
    1/2 teaspoon baking powder
    1 pinch salt
    2 tablespoons (1/2 stick will do too) salted butter (cold and cubed)
    1 cup buttermilk
    2 quarts chicken or turkey broth
    3 cups cooked turkey
    Salt and pepper (to taste)
    Step 1: in a big bowl, mix and whisk flour, baking powder, salt
    Step 2: Add the butter to the flour mixture and combine using two forks or a pastry blender until the butter is the size of small peas. You can also use a food processor to combine the ingredients as well.
    Step 3: Pour the buttermilk over the flour and butter mixture and stir with a spatula to combine until it becomes a soft dough. Be careful not to overwork the dough. The less it is mixed up, the more tender the dumplings will be.
    Step 4: After you have created the dough for the dumplings, heat the broth in a large dutch oven or pot until boiling. While the broth is heating, dust a clean kitchen surface with a generous amount of flour and roll out the dough into a 1/4-inch thick sheet.
    Step 5: Slice the dough into small squares using a pizza cutter to create the dumplings and add the dumplings a few at a time into the boiling broth, making sure not to dust off too much of the extra flour as it will thicken the broth. Continue to add dumplings until there are no more left. Cook for 8 to 10 minutes or until the dumplings are tender and fluffy and the broth has thickened.
    Step 6: Add the cooked turkey to the broth and heat until it is warmed through.
    Step 7: Feast on an incredible meal.....this recipe is money and it's one of the reasons I look forward to turkey season every year....Eat Good!!!

    I skin and cook the whole bird in the oven. You waste a lot of meat any other way. We'll get the meat and make soups and casseroles out of it and then make stock from the bones, neck and legs. Awesome hunt though. I'm in Missouri but from Texas. It was cool to see the bluebonnets and kolaches.

    Best time to hunt turkey is in the rain. Not sure about the wind but here in Iowa I always see them when it's raining. The wind is a different story. I know that Texas wind. I was stationed in Fort Hood for three years.

    Mike's bird looks like a Merriam but the feathers aren't quite white enough for that , so maybe it's a Osceola either way I'd give the win to Mike's bird for epicness, Rio's and Merriam's are both freaking but Osceola for the win awesome, thank for another stellar video Mike that's how it's done! I'd definitely be making a video to sell on DVD with that one, it's a very rare thing to get a double on video IMO! Giving thanks to Christ is awesome too!🙏🇺🇸

    Put ur flower in a paper lunch bag and you can shake the pieces around makes simple clean just throw the paper bag away after ur done. One less bowl to wash

    I cook the legs in a crock pot with broth and onions then pull off the meat strain some broth in a pot with the meat boil it throw in dumplings and then egg noodles
