    It’s 4am I have an online class tomorrow and learning how to cook bone marrow is more important

    Looks delicious. I think I will pop those bones back in with the scallions on top uncovered for another minute or two, just to carmelize the shallots, and then add the chives.

    You need to salt bath the bones for 24 hours or else you will taste pennies 🤣

    Soak the bones in salty water overnight. It'll draw the remaining blood out and give you a nice white marrow.

      @@kellypearsall4540 Significantly improves the flavor. The bits of tissue and blood usually left behind on marrow bones will give the marrow an off/gamey/sour flavor during cooking. Give it a good soak and all those undesirable bits will be drawn out. For more check out Scott Rea and his preparation method.

    Every Friday, when a new recipe video comes out, Joe makes me laugh and sometimes cry out loud. Wicked and dry sense of humour combined with a soft centre. TV chef's have nothing on this man's sense of humour combined with culinary skills. I know he got all his best lines from the Swedish chef but......
