This series follows the technology used to make products we regularly come in contact with.
In this episode we introduce chocolate. Chocolate is made from the cocoa bean grown in South America and Africa. Grinding beans that have been roasted for about one hour creates a gooey chocolate paste. Add ingredients like sugar, pour it into molds, cool it and solidify it, and now you have the chocolate that we’re all accustomed to.

Some companies (e.g. L0tte) don't add cocoa butter to their chocolate at all.
They add another cheap vegetable oil, instead.

Phillip Mulligan I worked at Hershey’s. We use cocoa butter and I worked there for decades and never saw any oil. We pressed our own cocoa beans. Extracted the cocoa butter, passed them through the rollers, and then churned the chocolate for 72 hours to make it smooth, etc. I worked in all departments from Reese’s pieces to peanut butter cups to kisses and every other product. We would even roast our own almonds. I never saw oil from the time is swept floors, to machine operator to inspector.

South American, Central American, Caribbean, Mexican (N.A) Hawaiian, Asian and African Cacao beans. that is the source of cacao beans in the world.
Not just Africa or South America.
The finest beans are coming from Central America ( with exception of El Salvador), Venezuela and Trinidad and Tobago.
The Forastero or Nacional type of beans are the most productive, even so, are the most bitter and considered the commercial beans.
The Criollo beans are the finest.
