a good idea for outlets would be to have a 2x2 box hanging from the ceiling along a rail with some slack to to move around the shop also maybe you could do the same for air

That sounds pretty cool! Ill have to look into that. At a minimum, I am planning to put outlets above the engine bay areas for trickle chargers and what not

Check out for insulation removed from flat commercial roofs. It can usually be had cheap or even free
