Anyways, my headcanon of why Hanzo has two dragons and Genji has one dragon is that one of Hanzo's dragons used to belong to their father and he gave Hanzo his dragon before he died. but Hanzo didn't know about that dragon until after he took to using the bow.
It's kinda weird I know. But that's what I came up with.

drageben in the actually game it says "two dragon brothers" so if the dragons r the same ones from the story I'm guessing probably a boy but this is j.sut from the fans so really it's interchangeable
drageben I think it comes from the fact that cats are referred to as "she" even though their genders are known, you know how people often think that some things are more feminine and some are more masculine? In some cultures cats are thought to be feminine and dogs masculine, so in order to make Soba's closeness towards cats more visible the creator of the comic made it so Genji refers to his dragon as "she", though this is just my own speculation as when I talk about dragons from Asian origin, I refer to them as "she" and to Western dragons as "he" because Asian dragons are sleek, long and seem to be more agile than their Western counterparts who use pure strenght when hunting and aren't that agile.
I know that this is few months old comment but my inner mythology geek woke up and I just couldn't keep this in.
