    I love that you guys did both research and keenly observed how locals would order/eat!!😆 That’s actually pretty smart! After watching many vlogs, I realised that a lot of tourists miss out because they didn’t do adequate research nor observe what the locals do…🥺

    That 3 coloured drink is basically tea or coffee with evaporated milk and gula melaka (coconut sugar syrup). Coconut syrup is already sweet so that won't be condensed milk as it would have been ultra sweet. Because you ordered teh halia (which means ginger milk tea) and you asked for the 3 colour drink as well, she assumed you wanted the tea option too. Appam is made from fermented rice (hence the sourish taste). That roast stall is super popular. You see people queuing before they open and they are preparing bulk orders behind the shutters lol. The guys are very friendly even to locals :) That soy sauce is usually made the "drippings" of the char siew as they roast and they will add other ingredients.

      Oh wow! Thank you so much for all the info! Teh halia is a new favourite, it’s absolutely delicious - we are so pleased we got the tea version of three colour drink, but next time we’ll have to try the coffee one - that also sounds yummy! 😍

      try teh halia from indian drinks vendors next time. As theirs would taste stronger and more authentic. Like those at Tekka hawker centre in Little India. You see them using real crushed fresh ginger.@@2Passports1Dream

      @@2Passports1Dream adding onto what simplyme3306 said, the tri-colour from evaporated milk and gula melaka mellows out the coffee, so it is perfect for someone who is not too into coffee. There has also been a trend recently where I see coffee being made with coconut water, which also mellows out the coffee a lot. Being a mix of culture, we also have other really great drinks (although you might also find it in neighbouring countries) like bandung (rose syrup with evaporated milk) and calamansi (a type of lime) with (preserved) sour plum to name a couple off the top of my head.

      There are few types of apam in Malaysia, one of them like you said is apam balik, fold pancake. Apam could also be steamed cake or cupcakes. Once in a while, I like to make apam pisang, steamed banana cake, sprinkle with fresh grated or shredded coconut.

    Lao Ban Beancurd is really popular in Singapore! they have many outlets! Good choice! i love the layer on top that has a nice texture to go along with the silky softness of lower layer!

    I visited Maxwell Hawker Centre during my first trip to Singapore. Even though I wanted to sit inside the building in the middle of the hustle and bustle, the temperature was just too hot. Sitting at the outside tables was definitely the way to go!

    Härligt att ni valde Maxwell! Har besökt detta HC sedan början av 90-talet och har aldrigt blivit besviken. Det var egentligen min far som tipsade om detta Foodcentre som han besökt redan i början på 60-talet, så det har några år på nacken 🤓 Tian Tian är kanske lite överreklamerat men det finns mycket annan god mat där som ni visar i vloggen.     Milky broth fish bee hoon is a banger that tourists tend to overlook, but locals know it’s as good as some of the more well-known foods! It actually kinda reminds me of Cullen skink (also delicious).

    Even though I don't live in Singapore, it's always a joy to see how tourists like both of you enjoy our hawker food. Just one little tip, if I may: Before using your plastic cutlery, it might be a good idea to avoid placing it directly on the tables as they can potentially accumulate germs. We want your dining experience to be fantastic, so this small precaution might help.

    Appam is a South Indian cuisine mostly regular in Mangalore (from Karnataka) and Kerala.. the batter is prepared with rice, coconut milk, and Yeast (improves fermentation of the batter & gives that fluffy nature to it). You are right it’s mostly savoury goes best with good fish or chicken curry or black chickpea curry. You guys should come down to South India to try this in this authentic form.. it’s my favourite just like you both ❤️🤗 soooo much love to you guys from Bangalore ❤️

    just an interesting note for you on why they add milk to the fish beehoon soup, the milk was originally to make the soup look thick and white like its boiled for a long time with fish bones.

      @@2Passports1Dream do note that Heng Heng Ondeh-Ondeh and Tapioca Cake is closed on Sundays. Best to go on Wednesday or Thursday at around 9.00am, where they have the most items available. They will close around 12pm so be sure to buy before they close. The stall owners start preparing at 3am and open their stall from 7am to 12pm

    Another tip
    Teh Halia is best enjoyed when bought from an Indian Stall that also sells Teh Tarik.
    The reason is that they brew their Coffee (Kopi), Tea (Teh) and Ginger Water (Halia) from scratch. Such stalls will have an elaborate metal tank system with 3 separate columns with taps for the Kopi, Halia and Teh. A fourth tap is included for dispensing hot water, which can be heated by electricity or by a gas flame.
    I just wanted to let you know that the stall that you ordered the Teh Halia from used Instant Ginger Tea Powder that comes in a packet and is already sweetened with sugar.

      @@2Passports1Dream you can try ordering a teh halia tarik at an Indian Stall next time. Do note that Teh Tarik uses condensed milk, so it will be very sweet. If you don't want condensed milk, just order 'Teh Halia C' instead. Evaporated milk will be used instead of condensed milk.

    One needs to mix the grated coconut and sugar, so can be aet using appam as flat bread. Similar to Tanpola in Mangalore India.

    You can ask for mix char siew, roasted pork and roasted duck rice. That is my fav stall, I usually go with noodle.

    Try out old airport road, alexandra hawker center, bedok block 58 hawker center. They are all very good and affordable.

    The sweet beanccurd you guys were eating have different names in many places. It is origined from China. Douhua, Taiwan, Sichuan, Yunnan, Guizhou, Hunan, Jiangxi, Fujian; in northern China, douhua refers exclusively to sweet variants In Fujian, brown sugar is added to sweet Douhua, while salted Douhua is flavored with dried radish, fried garlic, cilantro, dried shrimps, etc. In Taiwan, beans such as mung bean, red beans, and peeled peanuts are usually added, as well as soy milk, fruit, or taro balls.
    Doufuhua 豆腐花 Southern China, Hong Kong, Macau, Malaysia, Singapore In Hong Kong and Macau, brown sugar, sweet-scented osmanthus syrup, and ginger juice are usually added to Douhua. Chili oil or powder is normally added to it in southwest China.
    Doufunao 豆腐脑 North China, Hubei, Anhui, Jiangsu, Henan, Shanghai, Zhejiang Northern doufunao (lit. "tofu brains") are often seasoned with "salted stew", and Henan people usually eat it with local snacks. Tofu brains in Jiangsu, Zhejiang, and Shanghai are generally salty tofu brains like the northern ones. People in Hubei and Anhui also call it as tofu brain, but tofu brain in Hubei is generally added with white sugar, which is the sweet version.
    Laodoufu 老豆腐 Tianjin In Tianjin cuisine, Northern-style savoury "tofu brain" is a common breakfast item known as laodoufu (old tofu).
    Doufusheng 豆腐生 Taizhou, Zhejiang Sweet Douhua there is topped with syrup and some sweet-scented osmanthus; the salty one is topped with mustard tuber, seaweed, spring onion, etc.
    Nendoufu 嫩豆腐 Hubei In Hubei, people call spicy Douhua "silk tofu."

    next place chinatown.. make sure you try the poh piah by chinatown among others that you can try at Chinatown hawker Center. The apam that you tried before is call "chinese pancake" - mee jiang kueh in most hawker center. You should try nonya pastry (kueh) in many places.

      oh you are in paya lebah.. there is a hawker center at old airport road that has very very good food. Enjoy. Also the east coast parkway hawker center is on the green MRT line also @@2Passports1Dream

    You need to take melatonin when you time travel. We do a 14 hour time change from Canada to SE Asia and melatonin really helps. You need to get out in the sun immediately on arrival. Take melatonin at your new bed time. To be honest for us coming back to Canada travelling eastward is harder than going westward to SE Asia. Getting some sleep on the plane really helps. Stay healthy and enjoy!

    Think your last dessert is similar to silken tofu, perhaps sweetened and flavored. I used to make nice desserts from silken tofu , enjoy seems your having a great time. ❤

    Halia in Malay means ginger.. the best I can recommend to u is to go to an Indian stall selling drinks and order tea tarik n tea halia..

    There's two variations of teh halia (ginger tea) or any hot drinks really, you get the chinese style from the Chinese drinks stall or the indian style from the indian drinks stall.

    I just wanted to let you know that some hawker stalls selling Sliced Fish Bee Hoon Soup might ask if you want milk in your dish. If you want, they will add evaporated milk inside. These stalls use the evaporated milk as a shortcut to give the soup a milky appearance.
    However, there are other stalls that don't add milk. These stalls have the best Fish Soup because they deep fry the meat and the bones, then add water to boil it into a soup. Such a soup has got a milky white colour without the need for milk.
    I will recommend you to try the Fish Soup from Tang Kay Kee Fish Head Bee Hoon at Hong Lim Market and Hawker Centre. They do their fish soup the deep fry and boil method

      I would describe it as seafood-briny. The soup base is usually pre-boiled using bittergourd, fish bones, shaoxing wine, & I think also ginger & scallions. A slice of tomato is usually added during actual cooking, & the fish slices themselves (Batang Fish/Spanish Mackerel) are also mildly sweet & very delicious when fresh. But the resulting broth is not sweet for some customers, & so they would ask to further add evaporated milk. Very flavourful either way, like family-recipe comfort food. I love it with white rice, plus a chilli padi-soy sauce dip as condiment of course.

    The Vietnamese lady running the appam stall did not know she was applying for a stall designated for Indian food. She had wanted to sell Vietnamese food instead. When she got the stall and was told she was expected to sell Indian food, she was quite dismayed but went out to learn and did very well for herself.

      @@kamariahabdrahim6963 There is a certain balance, I think, to be maintained in hawker centres. Certain stalls are reserved for certain foods.
      Although I do find it strange that in certain hawker centres, there are only one or two stalls selling Malay or Indian food. Not very balanced.

Could it be the Vietnamese food that she wants to sell is not permitted in Singapore ( Insects consumption? ) certain foods.Singapore has a stringent regulation on food safety and health.     You don't actually put the chilli into your food that will be too overwheming. It's actually used as a dip for your chicken or fish.
