So I just made these, with a few minor changes. I used self raising CAKE flour instead of regular flour (less protein=more tender result), and instead of measuring I just used all the zest of 2 lemons and the juice of 1 because I looove lemon. Let me tell you these are THE fluffiest, most tender and delicate pancakes EVER, so incredibly good, and my folks agreed. High praises from everyone. Thanks chef John, you never let us down 😊❤
I made these today. My family loved them, even my "super picky french" husband liked them. Super tasty and with a great texture. I would love to hear some tips to cook them, they weren't as delicious looking as in the video. Also, I try to involve my kids in the kitchen affairs as much as I can. this recipe proved easy for a 5 year old !

I made these and they were delightful!! I normally don't care for fluffy pancakes, but these were so light and had a lovely flavor. They even tasted delicious on their own without any toppings. I used Meyer lemons for this recipe and added extra juice because I love the taste of lemons. I didn't like maple syrup with these, surprisingly, so I just ate them with butter, powdered sugar and fresh berries. Love you, Chef John!!
chef John, I love the way you choose the food ingredients not avoiding the fat. the good food must come with reasonable fat. traditionally all the food are come with fat. that's the original taste. but it spoiled by the now in the name of healthy way lifestyle.
I just made these pancakes (30 March 2017). Contrary to my expectations, they're very light. They have a mild lemon flavor. The batter is very thick, so I added a few tablespoons of milk to thin it slightly. I made a "syrup" by melting raspberry jam with a a couple of tablespoons of water. Very nice pancakes -- a nice change from traditional pancakes and good for a weekend breakfast or for a light brunch / lunch. (These would probably also be good if they were topped with fresh fruit or berries, powdered sugar, and / or whipped cream.)
I doubled the recipe and made these today. They were the best pancakes I ever had. The whole family loved them! Will definitely be making these again. Ty!

Just made these on Christmas morning. Followed the recipe exactly as written, and the pancakes turned out very tasty and fluffy. I ended up making 18 pancakes. More than enough for 3, unless you have a teenager at home.

Omg THANK YOU for making pancakes the right way and not stir it until it's smooth (hello that activates the gluten and makes for flatter and chewier pancakes 😑). People always tell me that I'm making them wrong when I say to stir it until it's just combined but still lumpy and let it rest to saturate the flour clumps for approximately 15 min. But they make them lovely and fluffy and soft! Cheers to great cooking and knowing your stuff 👍

I was feeling creative this morning. I love these lemon ricotta pancakes but thought I could transform them into cannoli pancakes. It worked! They obviously don’t taste exactly like cannolis, but the flavors are there. I subbed sweet Marsala wine for the lemon juice and didn’t add the vanilla. I did add the zest because most of the cannoli filling recipes I saw had it. I put chocolate chips in some of them, but that seemed to be too much, so I will switch to some grated chocolate on top. I ate them with powdered sugar sprinkled on top.
They are vlratly people who use bottled, nutmeg, hate cayenne, and need the ole tappa tappa and the ole shaka shaka. This guy is a slice of fried gold!

For your consideration... Sugar some mascarpone and layer it generously between the pancakes like sweet protein frosting :)...o Yummy... Now make a blueberry compote with 1 whole quart of blueberries and cover the pancakes with it like it was a ganache. If it will looks like "have some pancakes with your blueberries" then you got it right. This works... It works good.
You can faintly see Chef John's reflection in the stainless bowl. It kind of reminds me of watching for Alfred Hitchcock in a background scene in his movies. It added to the intrigue.....the co-mingling of salty, tart, and rich characters, the bubbling plot, the mysterious waiting, the rising heat, and finally the startling grand climax.
