In growing up I always heard people saying to soak the beans overnight, but I never knew it was to get the gas to come to the top. I always thought it was so you wouldn't have to cook them a long time. silly me. Thanks for the important information. Lots of people don't eat beans, because they say it make them have a lot of gas., now I know why. You're never to old to learn.

    • @SuperSaltydog77

A few years ago I read a cookbook that explained the musical fruit. Beans have a sugar in them that is not digestible in the stomach. When the beans reach the intestines that sugar is fermentable, and that fermenting creates the gas. But that sugar is water soluble, so soaking the beans gets the sugar out then you throw out the soaking water and continue to cook with fresh water. The cookbook is called "Good Food Book" by Jane Brody.

My granny always put a tiny bit of her homegrown ginger in her big pot of beans. About the size of a black eyed pea. She swore it degassed them without changing the taste. 🤷‍♀️🤷‍♀️🤷‍♀️

@@apiecemaker1163 I never heard of using ginger but I'll try that now. My grandma told me to add 2tbsp baking soda to the beans when you soak them. Helps get the gas out. I also add 1tsp to the beans when I cook them.

The way to pick the bad beans out and easily is seating on your dining table. You put the amount of beans you will be cleaning on a bowl on the table. Then, you seat down, put an empty container - like another bowl - on your lap. Next, put some couple of handful of beans on the table ,spreading them out flat on the table. This way it's easy to see the bad beans. Then, you pick the bad beans out and put them to the side. And last, with your hands, you draw together towards you the good beans and slide them in to your empty lap bowl. Hopefully, I made my self easy to understand.

you can check this out on u tube videos.....that is where i learned it this is how i learned how to do it : soak the beans overnite next day, rinse and drain and then put the rinsed beans in a cold oven overnight next morning rinse and drain the beans and check to see.....they will be sprouting! put the rinsed and drained beans back in the cold oven overnight the next morning they will all have nice little tails!!!!!!!! now they are ready to cook! When you sprout the beans first, the nutrition is increased EXPONENTIALLY! i used to have a hard time digesting beans, but after i learned to fully sprout them first, i have NO PROBLEM digesting them

Yes, the gas stinks!🥴 Let me tell you, I tried that no soak method that people use and once I took them from the canner and got home from work, my house smelled like a gas leak. I was literally running through the house checking the range and dryer trying to figure out where the gas smell was coming from. I sorry to be long winded.🤦‍♀️ Needless to say, my mom laughed at me when I told her the "the gas leak was from the beans" 😲😲🤣🤣🤣
Let's just say, I'll stick with my normal method of soaking my beans overnight. There's a reason for the process!

Well, I just found you tonight and I’m very thankful for it!! This was the 1st video of yours that I've watched... LOL, had to backtrack your other videos to find this one again to leave a post!!
I've canned for years but have never canned beans. Because of digestive issues, I've not even been able to eat beans since 2018.
What I truly appreciate about your prep video is how you take the time to remove the excess gas from the beans. I've seen many others canning beans but have never seen anyone do this before. Oh Honey, this 66-year-old gal wants to hug you!!! You may have given me my beans back!!
As a child, I always asked for beans & cornbread for my birthday dinner!! I was the gal who would drive out of my way to go to Popeye's, not for their chicken... I'm sure their chicken is great but I've never tried it... it didn't exist for me ;) Oh, but their Beans & Rice certainly did... even got my daughter addicted to them!!
I'm hopeful that beans can occasionally, be on my menu again, I really miss them!! Thank you for teaching me!! I am definitely not too old to learn!! BTW, I have at least 80 lbs. (maybe more) of beans that I need to can up. And yes, I’m a subscriber now!! ~Kathy 😉🥰

I was once given the advice that when I buy beans from the grocery store in cans off the shelf that I should always rinse them well and to also soak them for at least an hour or two before using them because it will help get rid of any gas that may not have been released during the manufacturing/processing of the product. Sometimes I get foam. It was good advice.

Ive never canned my beans. Just dry stored them with bay leaves. I may try this. Your eyes are better than mine. I have to put a handful at a time, in a black, flat bottom bowl, and pick the beans like that, so that I can see the damage. I wouldnt be able to see anything with as many beans as you have in that pot. But, I put on some music, sit at the table, and do them 1 handful at a time. In no time, I have a big pot ready to go. Thank you for this. I think I'll can some this year. Would be nice to have cooked beans ready for a quick meal. 😁👍❤

You sort and wash beans the way my mama and grandma taught me. I was also taught to soak my beans. Nothing better than pinto beans, a little chow chow on the side and cornbread.

Thank you so much for taking the time to show us how to properly prepare our dried beans. Fun Science Fact: Washing well, and draining off presoak water from beans removes the natural preservative (carbohydrate) layer. That "gas" is actually oligosacharide.

Hey homestead...well evidently I got confused on the target mason jar orders and I only got 36 that is 3 sets of 12 32 oz cans instead of the 108 quantity that I thought I had...lol. Anyways security system kept going off at 1:58 am last three mornings battery low and I taught engineers at work for a training class. I’m exhausted many blessings and no ex’s yet on pressure canner the accessories should be here tomorrow per fedex...take care

I clean mines in a WHITE SHALLOW container because it enables me to SEE all the dirt or bad ones. Just an idea to make the cleaning easier and FASTER. I'm from Puerto Rico we eat beans!😆😅

I came across your videos last week when I was looking for canning information, and subscribed right away. You are a good teacher and make it all look so easy. You have a beautiful disposition. May the Lord bless you, your family and your homestead. That's exactly how I pick and wash my rice and peas also. Greetings from Whitby, Ontario, Canada.
