Yep, people have been canning milk/cream for hundreds of years. Im doing it in half gallon jars too. I am a rebel canner! I tried fit into the conservative National Center for Food Preservation but right away I could see that people all over the world canned using methods passed down for hundreds of years...and they are alive to tell the stories, lol. I fought It hard until lately and now Im gonna can what I want and not cook the hell out of it. I also use 2 pressure cooker/canners too. They are made in Germany and they get to 240 degrees which is in the kill zone. One of my first canning sessions was collard greens with lots of ham (which by the way is not 'approved' by NCFP). Didn't care, did it any way and Im still alive, lol. Lots of work but super yummy.
When we can our own food we know EXACTLY WHAT IS IN IT.

Yesterday day I canned a gallon of milk using this method and it processed exactly how you stated in the video. I opened a can today and tasted it straight as well as in my coffee and I'm officially NEVER BUYING it from the store again! This is way more cost effective. The smell , color, texture and flavor is excellent. Thank you 😊

I made this and absolutely LOVE it. Great with my coffee. I bought two gallons of organic milk for $5.39 each. My organic half and half was almost $5.00 a pint. I ended up with 18 pints of evaporated milk for under $11.00. I would have only got 2 pints of half and half for that price. As we speak I have pumpkin pies in the oven.
MRS HH I have to say....You have done so much for a very dear friend of mine. You see, I moved out of state away from her and she was lonely and bored. I talk to her everyday on the phone. I told her she needed a hobby. I am a canner and love your channel. SHE found your channel and called me with excitement. Her husband bought her a 921 All American canner and OMG she has happiness and boredom is GONE! Your way of TEACHING is so fantastic I just can't tell you. That was a very long time ago.I remember the milk man. We would leave our empty milk bottles by the door. He came by and took the empty bottles and left fresh full bottles.
I grew up on a farm and we had a milk cow. We called it sweet milk as well. I haven’t heard this in years and it brought back so many memories. I lost my moma in 1996.
My daddy did too. We'd have broken up fried cornbread in a glass of milk. -)
We also called it Sweet milk

When I grew up evaporated milk and Karo syrup mixed with water was my formula
With one of my boys he would not drink milk. With the aid of my doctor I went through 6 different recipes or formulas. Evaporated milk and Kari syrup was one of them. Finally discovered he needed soy. Apparently milk bothered his stomach and he refused it. Eventually we got him to take 2% but for the first 6 months he had to have soy formula. He’s now 42 and drinks milk all the time
All of my children started out with soy formula and they can drink milk now. Only one sister with same blood type as me had the same situation. Out of 2 + parents and out of 8 children +, we’re the only - ones in our family.
The Dr would write a script for that formula my Mom raised all of us on it!
I made that for my son ,who is 50 years old now.

While it is "possible" to can cheese, from experience I can tell you the biggest reason to NOT can cheese. When canning cheese, you're heating it and since all cheese contains fat, the heating process causes the fat to separate from the cheese product. That fat, when left at room temperature once the canning process is completed, can still go rancid (been there - experienced that) - plus, there's no way to reincorporate the fat (if it hasn't gone rancid) back into the rest of the canned cheese.
The safest, longest-term storage for cheese is to freeze-dry it into powdered cheese -- that leaves the fat in place and only removes any water that was in the original cheese.

@@pamelaremme38 -- waxing is better (than canning) as no air or light reaches the product. That said, however, waxed cheese still needs to be stored properly -- meaning it must be stored in a cool (optimally between 40°F and 50°F), dark place, and turned at regular intervals (if you do it once a week on a specific day and at a specific time -- for example: every Thursday night at 8PM -- the process of turning will become a habit and won't be missed/forgotten). Freeze dried & powdered cheese requires much less work/handling.
NOTE: Cheese Wax specially made for coating cheeses is the only wax that should be used.

Wanted to give you an update. After 11 days just got home after hurricane Ida. I have partial roof off garage but my canning jars are safe. When things get back to somewhat normal will start canning meat.

Home caned evaporated milk also tastes WONDERFUL in your coffee.... Much creamery taste than just plain milk, with the added bonus of less fat than real cream but still 100% natural... 🤤😉

@@candacethompson2521 Don't flavor the canned milk before pressure caning it. The flavors can turn out really WEIRD... Can your milk plain and flavor when you are about to use it. I have bought hazelnut flavoring extracts for my coffee, as well as when I need it in baking. Normally, I make my own flavors/extracts (alcohol/Vodka and whatever nuts, berries, vanilla beans etc.) but, I've been lazy this year since I've had so much to do and so little time to get it done so, I resorted to buying various "flavors/extracts".
@@bronzefox9035 I've been caning milk for about 4+ yrs. Same with butter. Tried my hands on ghee but... not worth the extra work and easy to ruin... I also pressure can lard, beef tallow and other fats from the animals we hunt/harvest. (we live off grid mid BC Canada) Pressure cooking times, same as for meat. The hard beef tallow is also wonderful to make votive and tall candles in CLEAR heat resistant jars. (if you need the candles for light, you need clear jars) Jelly/jam jars bought in the store work perfect, since they are heat resistant! Or, I use my old caning jars that have a nick in the rim. Nothing goes to waste... LOL Stir in a few drops of some nice smelling essential oils to the beef tallow melted fat, before pouring the melted fat into your prepared (glued down wick) jars, so it doesn't smell like a burnt cow when you use them. 😳 They last as long as the seven day candles you can buy in the store... Not to forget, all of the above mentioned fats and more are perfect ingredients in making your own soap. As a basic soap, is made of only fats/oils, lye, water and whatever scent you choose to put in it or not. Search here on RUclips, you will find many experienced soapers that show step by step how to make your own soap and bath and body products naturally. Just be prepared... It's highly addictive and you like me, will most likely end up with so much soap, you'll be tripping over them and even your friends will tell you, no more please... 😁

I was taught to put regular milk in a WIDE heavy bottom pot and cook on medium until it begins to bubble lightly, then turn down to a simmer -- stirring regularly until the water evaporates out of the milk to the point that the amount in the pot is around HALF of what it was originally (thus, 1 gallon would produce 1/2 gallon of evaporated milk) and then pressure can in jars. Without cooking out a lot of the water, there isn't enough evaporation to make a true evaporated milk. For a recipe calling for 1 can of evaporated milk, use 3 cups of milk and use the process above to reduce the milk down to 1-1/2 cups (which is 12 ounces -- the exact amount in 1 can of evaporated milk).
To make sweetened condensed milk, mix in 5 cups of sugar into 1 gallon of milk in a WIDE heavy bottom pot, cooking on medium and stirring constantly to fully incorporate the sugar as the milk heats up, turning down the heat from medium to a simmer as above. For a recipe calling for 1 can of condensed milk (which, despite being 14 ounces by weight, is 10 liquid ounces), use 2-1/4 cup whole milk and 2/3 cup + 1 tablespoon granulated cane sugar.
Eileen Sien do you still process your milk this way? Did not know there was a difference in canning milk till I read your post. I am going to save it. As soon as I can get a pressure cooker I will try your way as well.
@@deanarogers9848 - no kids at home, so not anymore for shelf storage -- only for recipes.
Before you get a pressure canner, you can do "practice runs" on the "cook downs" for a recipe that calls for evaporated milk or condensed milk. That way,, when you get the pressure canner, you'll have the "cook down" process down to a science.
Saw one of those America's Test Kitchen videos last night - in which they were discussing evaporated milk and sweetened condensed milk. They said that commercially produced evaporated milk is evaporated by 60%.
So, cooking it down to 50% (as I was taught) is pretty close.

Exactly what I came down to the comment section to say. This is only slightly longer processed canned milk. It has not been reduced in volume at all, so no water has been evaporated from it, as is required for evaporated milk. What she was making is actually ultra-pasteurized shelf stable milk, essentially the equivalent of the boxed milk that requires no refrigeration.

What a blessing....I just subbed to your channel. Canning milk....I had no idea. I canned some fish I bought cheap that I couldn't store in my freezer using my small pressure cooker I had for 55 years. Boy did I get hit with the canning police! Altitude, pressure, timing, blah, blah, blah. I don't think I can use a pressure canner because I only have a single burner induction cook top. Well, I cooked them pints for 90 minutes and the lids all sealed as soon as I took them out. The police told me to throw it out. You know, I'm old enough to die and I am not a food waster. You know where I'm going....I'll eat it when I'm starving. You have a beautiful voice. Much love and many blessings to you and your family.
My presto canner manual says to process fish at 11 pounds for 100 minutes at my altitude...so you weren't far off...in general, when I am in doubt, I'll take the pressure up to 15 pounds for a portion of the time, or all of it....lol...hasn't ruined anything yet! For tuna, you should cook it at 350 for an hour, put it in fridge overnight then process...
Presto makes a canner with a special bottom that will work on an induction burner.

When I look on my TV at selections to view, I get a 5 second moving preview of the episode. Today, I saw the title regarding making and canning evaporated milk. But the moving picture thumb nail showed you seasoning a roasting chicken. I heard myself say "What? How is she going to make evaporated milk out of a chicken? This, I gotta see." I clicked your video. Laughed myself silly when you announced you were making crockpot creamy parmesan chicken for dinner before you started canning the milk. You tickle me. You'll be hooked! I canned 10 quarts of turkey broth today. 3 turkey carcasses (2 from the freezer), boiled for 7 hours. Strained the broth, jar it, PC it. I used a jar for stuffing on Thanksgiving, and realized my pantry was low.

When I was growing up we has creamed potatoes (mashed). Gravy, daddy would use to make white gravy just add a little water, mom would make biscuits with it. You bring back so many memories.

It is a good thing I had a few crock pots because last snowy winter my furnace went out for a week. The crock pots and my daughter's food dehydrator kept me warm and my pipes from freezing.
