    Jessica!!!! Thank you for inspiring me every single day!!! Your positive attitude and trust in the Lord, has helped me as I have been grieving the loss of my mom back on November 29th 2020. I have been so angry because I was not allowed to say goodbye to her, or touch her, or comfort her, due to Covid. I just wanted to say that your videos make me smile and uplift me.       Very sorry for your loss. I lost my mother to covid as well a year ago. My grieving process has been so different from other loses. We couldn’t have a service or funeral so I feel like I’m stuck somehow. I will be praying for you

    Jessica you make me want to be a better person. Your videos are teaching me many new things. I just feel a peace come over me when you are talking.     I love making my own extracts! I have been making vanilla for abt 30 years. I have a friend who lives in Hawaii and grows and processes her own beans. I usually have 3 fifths going at one time. I use 3 types of beans (Tahitian, Hawaiian & Madagascar) with Kentucky bourbon (2 5th) and one 5th with vodka. I was lucky to visit a vanilla and cacao business when I visited Hawaii 3 years ago.. I have made coffee extract, orange, lemon, limes, coconut, chocolate, strawberry. Its such fun!

    For that 'french toast casserole' you can do an egg and milk base and then add veggies and sausage or cheese for a savory strata!

    Almond extract from peach pits?! WHAT!!? My mind is officially blown. 🤯If I like the taste, that would be the most revolutionary thing I've ever done! I have a relatively new tree nut allergy (over the last 6 years or so), but I used to love almonds and cashews. One of my favorite applications is in my oatmeal. I put in peach chunks, dried cranberries, brown sugar and almond extract. At the end I used to sprinkle sliced almonds on top...and chocolate chips (whispers chocolate chips). I know...I know...don't judge me, all of you out there. I already feel your judgment 🤦🏽‍♀️😄. I am going to look up the specifics of how to do that. Thank you SO much for that amazing tip!

      Hi! Please use caution when using peach pits,seeds,leaves,bark, sticks and roots. Though they are medicinal and may resemble almond flavoring they contain cyanide. This compound concentrates during the extracting process and can be toxic when ingested. Please always do research before extracting either in alcohol or water (as in making a tea) anything. I have been making tinctures/extracts for years and always err on the side of caution and steer clear of anything that has warnings of toxic potential when extracted. God bless!😊

    Omigosh, brilliant minds - yest I diced some apples for hand pies. Stirred in sugar, flour, lemon juice, a pinch of nutmeg and you got it "cinnamon". As I stirred I couldn't figure out what that savory aroma was....it was cumin from the identical bottle my cinnamons in. So my filling took a cold shower in the sink which saved it w no lingering taste. So glad I caught it before plopping it into my pastry rounds!! 🤣

    We call that a bread and butter pudding here in New Zealand. I often put butter and jam on the slices and layer it then make my egg and milk mixture. You are so creative in all that you do and your children just a joy 😊

    How I wish I could justify getting a freeze drier, but as a single older woman and living alone, it really wouldn't be worth the cost for me. (But how I would love to have one!) Ah well, I'll just have to live with the desire. Instead, I can enjoy watching you and other homesteaders show what new foods you are trying and giving your opinion on which you would continue to make.     Very nice 👌 on all your extracts, the blue berries i done acouple yrs ago love it. On the oil ones I've never put mine near light always in a dark Warm place, as the plants are already dead and the sun light take the medicinal properties away, I don't know maybe it's still strong enough for what you need for, just what I learn over 50yrs ago from family member who knew herbs for health reason. Love your videos, y'all are a beautiful family lots of love ❤️ and see you again on your next video.

    It was easy to make lime, orange, mint and vanilla essence using vodka and homegrown citrus and mint. I’m also drying oregano from our garden. A little everyday and my pantry will be fully of homemade goodies. Thank you for the how to and inspiration.

    Thank you so much your videos keep me motivated I was able to get 40 pounds of bananas for $10 so I'm busy dehydrating, freezing, and making monkey butter this week. Your tips of freezing fruit and then making jams or syrups later is really helping with my Mango harvest from the spring. I'm trying to clear some room in the freezers for protein.     Should have used those bananas for banana extract. They have to be really ripe like that for it work. Peal them, slice them up, put in a jar and add you vodka. takes about 3 - 4 weeks then strain it out. Same with Strawberries, but not so ripe, you want them a little soft, same amount if time.
    I have made the following extracts:
    Vanilla, lemon, orange, strawberry, banana, chocolate, coffee, cinnamon and a few others. Never could get the Nut extracts to work for me.

    Hi Jessica always love to see you. Today I got lemons and began the process of making limincello. After I got the peel off, I juiced and got a pint of lemon juice, put the remaining parts on to boil and got half a pint of the lemon not juice, rather thick when strained. I guess it can be used as flavoring. They are In the water bath now. I'm going to see about making candied lemon peel when the time comes to strain the vodka off the peels. 5 days to a month. It should be good. That will have gotten my money's worth from the lemons. I try to use all of whatever I'm working with. I dried the peels from some peaches.. I read you can make peach tea from them. I drink hot tea,, but can't find a recipe, would you just tastes them in boiling Water? You are such an inspiration to all who watch you.     Also I can't keep okra around. I have a big wok style pan full of oil of different kinds bacon...olive...avocado constantly changing. Add defrosted or raw okra as is and get to a light golden..salt pepper...so yummy!

    I make the French toast casserole as well. Something that I have found makes busy mornings easier for me is making it the night before and letting the bread soak up all the eggy goodness in the fridge overnight. Then just pop it in the oven in the morning! I also make a brown sugar crumble for the top but powdered sugar seems like a much quicker way! Thanks for all the inspiration you share!

    I am writing to you because I want to share what happened to my son in hopes that you can also help me share. My son was a victim of a carjacking on 9/21/22. We live in west palm beach Florida and he just so happened to be visiting the beach as he suffers from depression. He stated that he stopped to send a text and next thing he knew he was being dragged and beaten out of the car. I can’t even imagine the horror my son was feeling in that moment but as his mother my heart breaks to know I couldn’t be there to protect him. When he tried to hold on to the car in order to keep the thieves from taking it they sped up dragging his body in the process. My son stated that the next thing he knew he was lying on the side of road left for dead. He tried to flag people down to help him, and no one stopped(which my heart continues to break knowing I couldn’t be there to protect and save him). Finally a trucker stopped and called 911. Once my son reached the hospital they called my husband to tell him that our son had been taken to the hospital as a victim of a carjacking but couldn’t give us any further information until we arrived. As a mother, words and emotions could not describe what was going through my soul, but as God is my witness I cried out to God to take control of the situation and give me strength. When his dad arrived the police were there taking a report and my husband was taken back by how unprofessional they were handling the situation. They stated to my husband that they found our sons car with someone inside but did not arrest them because they did not have enough “probable cause” to do so. My husband and I are still trying to wrap our heads on why the police made that type of decision knowing that the car had already been reported stolen, and obviously the person inside of the car was not the actual owner. In the process of the doctors working on our son my husband came to get me because he didn’t want me driving and having an accident myself due to how distraught I was from the news that we had just received. On my husbands way home the hospital called and told my husband that our son was ready to be picked up from the hospital. We where completely taken back and shocked as we could not understand how a hospital could release him considering that his injuries were significantly serious. When my husband arrived back at the hospital he found our son sitting outside in a wheelchair. Our son was crying in agony and pain and we made the immediate decision to take him to another hospital and advocate for him. The doctors who took care of son at the ER were full of empathy and compassion. They immediately took care of him and started working on his injuries and pain management. As God is my witness this has been the most challenging traumatic experience I’ve had to go through as a mother and everyday I have to ask God to give me continued strength, as I need to be strong for Alex. I’ve had to take time off work because I refuse to leave my son alone. We received news yesterday that our son has a small brain injury and there may be a possibility of facial paralysis on his right side. We are praying and continue to share his fundraiser in hopes that anyone reading this can help me spread the word. Please if you find it in your heart, help share this fundraiser so that it can reach as many people as possible as our son has a long road to recovery ahead of him. God bless♥️

    Oh my, your breakfast is basically what we had in my early childhood as "bread pudding" for dessert. We didn't have chickens so there weren't as many eggs in our egg custard. Ours was generally sweeter with added bits of fruit padded out with raisins depending upon the amount and type of fruit. And for a while, ours used day-old, unfrosted doughnuts sold or given as animal feed from a local mom and pop bakery. Egg custard based, bread and rice pudding were frequent, winter desserts and mid-day snacks for us.

    Jessica, I am amazed at how much you are able to get done in the kitchen with all your other responsibilities while pregnant. We love the french toast casserole, but make it at night and bake in the morning. It's always our holiday breakfasts. Sometime I'll put 4oz cream cheese in the middle or berries too. Love all the homemade extracts!

    In our house your French toast casserole is called bread pudding used for dessert. We add sliced almonds or pecans. Sometimes there is caramel in the bottom of the pan.

    I used to have a herb shop and I would make vanilla extract to sell. If you leave the vanilla beans in the jar, all you have to do is keep replacing the liquid as you use it and you could keep it going for years, rather than buying new, expensive vanilla beans.

    You can use the spent vanilla beans for vanilla sugar as well. Let them dry and then put them in a jar with sugar for a while and then just mix it in a blender until you have a nice powder. Looks like powdered sugar and smells and tastes of vanilla.

    I love watching your videos. I get a lot of great ideas from you. I learned from another channel, If you add small amount of water to the pickle juice it will freeze dry much better. I use 1:3 ratio. It wont be so sticky. It will not take any longer to dry. You will have a much better quality of an item.
    This works great for fruit juices or the juice off canned fruit.

    You might want to reconsider using peach pits or other kinds of fruit seeds to make an extract. They contain cyanide properties that will extract out if you put them into the alcohol. Be safe and keep your kids safe.

    You continue to inspire me. Because of you, I started 2 bottles of vanilla extract in March. I'm going to try peppermint next. So I can use oil if I dry the leaves or use the vodka if I don't? Pickle juice powder!! Great idea. I so want a freeze dryer. God bless you & yours.

    Oh Jess the extract was such a fun class!! Extracts are so expensive and alot of times taste cheap. And the oils my kids always want to do this type stuff ,going to watch this with them! Idea: pocornoplis makes a strawberry and cream popcorn. I know that like freeze dried strawberries pulverized and some kind of hardened creme (cold coconut something) but no coconut flavor a vanilla and it'd amazing ..the strawberries anyways sounds easy!

    Pickle juice is also good to soak some chicken breasts in overnight and then cook them for chicken sandwiches. This is the secret ingredient that chick fillet uses for their chicken.

    Good morning! I made your 30 minutes rolls! Beautiful recipe- I made hamburger buns with it and cut it by 1/3s. It made 9 large hamburger buns - perfect density, but lofty and light, sliced perfectly. Thank you!!

    Pickle juice also makes a great brine before grilling or cooking chicken breasts, tenders, etc. I do it often when I finish a pickle jar and don't want to waste the juice. Makes the meat super tender and juicy! Just don't add too much extra salt when seasoning the meat.

    Such a lovely video! I am a herbalist and always press my plant matter after draining the alcohol. It gives your extracts a little more oomph.
