  • Two types of pickles in this word: Fermented Pickle and A Quick Pickel. Today I'm showing you how to make sugar free, keto pickles. Just like we do in the restaurants.
    This is also called a quick pickle. The method is simple, heat up some brine (vinegar, salt, and spices) add your favorite ketogenic vegetable and BOOM you have a pickle.
    Pickles are not limited to cucumbers. Anything works here. Take whatever is going bad in your fridge, chop it up and toss it in a jar. Add some hot brine and your cooking game just got a boost.

      These have natural sugars in them in the form of starch. These are more complex sugars than sugar and high fructose corn syrup. Im.not even sure the benefit of adding sugar other than as a persertive.

    BTW for anyone who wants the slight sweetness & mellowing effect that sugar adds to pickling brines without adding sugar, then definitely consider adding Stevia or Monk Fruit sweetener. 😊

    i live here in japan and while japan has their pickles, its often with sugar. im diabetic so i've made my own bread and butter pickles, dill pickles, and red onion. it really adds that extra flavor youre looking for. i want to do a pickled italian vegetable ... the one with cauliflower, carrot, onion etc.

    Pickles are a great way to add flavor and color to a dish. Cauliflower pickles are so TASTY! Keep in mind onions have natural sugar in them so use sparingly.

    Had a duh moment! Purchased some pickled garlic ate the whole jar in 3 days.told my husband to try one piece because that's all was willing to share.he looked at me weird and said...how much sugars in there? I said none its not like bread and butter pickled.are you sure he asks.confidently yes I say.he looks on the back and sure enough there's a small label on the side that says sugar not even close to the label with the nutrition facts which indeed says 0 sugar! I'm getting my karma for only sharing one. Ugggh these labels!

    • @TheKetoChef

      I did a kimchi video. That was nice. Im working on a classic dill pickle. Problem for me is storage. The pickles became cloudy and mushy too quickly so I’m still tweaking the recipe.
      Best luck I’ve had has been sauerkraut. Just salt and cabbage.

    • @andreaarnold6962
      @andreaarnold6962 5 лет назад +3

      Fermented pickles are easy two table spoons salt to two quarts water. Distilled water only so you don't disturb lacto bac . Make sure everything is very sterile. 3 to 4 bay leaves in the bottom insure crispness. Add any spices you like but make sure everything is under water so bad bacteria doesn't grow. Let sit for 4 weeks between 68-72 degrees

    • @austenhead5303

      Yes! You must keep these refrigerated even before opening. These aren't canned, shelf-stable pickles, they're quick pickles, which means they must be kept in the fridge and eaten within a week or two.
      I'm looking for a sugar-free shelf-stable pickle recipe myself. This is NOT it.

  • @MitchPR08
    @MitchPR08 2 года назад +1

    I’m not trying to be THAT guy but PLEASE for your own safety do not store unprocessed pickles on your shelf. Refrigerator only! By unprocessed I mean they haven’t gone through the boiling water canning process that kills all the microorganisms inside and seals the jars. Since these are not processed there’s still bacteria in those jars that can proliferate if not kept in a cold environment.
