- Two types of pickles in this word: Fermented Pickle and A Quick Pickel. Today I'm showing you how to make sugar free, keto pickles. Just like we do in the restaurants.
This is also called a quick pickle. The method is simple, heat up some brine (vinegar, salt, and spices) add your favorite ketogenic vegetable and BOOM you have a pickle.
Pickles are not limited to cucumbers. Anything works here. Take whatever is going bad in your fridge, chop it up and toss it in a jar. Add some hot brine and your cooking game just got a boost.

Finally !!!!!! A recipe without sugar !!!! THANK YOU SOOO MUCH 😊
These have natural sugars in them in the form of starch. These are more complex sugars than sugar and high fructose corn syrup. Im.not even sure the benefit of adding sugar other than as a persertive.
BTW for anyone who wants the slight sweetness & mellowing effect that sugar adds to pickling brines without adding sugar, then definitely consider adding Stevia or Monk Fruit sweetener. 😊
What ratio?
Do they have the same shelf/refrigerator/keeping life as sugar? 🤔 Hoping 🫣
I grow Stevia, so I cut some leaves into my brine and it worked!
I was just wondering how to make quick pickles without sugar. Thank you!
i live here in japan and while japan has their pickles, its often with sugar. im diabetic so i've made my own bread and butter pickles, dill pickles, and red onion. it really adds that extra flavor youre looking for. i want to do a pickled italian vegetable ... the one with cauliflower, carrot, onion etc.
Pickles are a great way to add flavor and color to a dish. Cauliflower pickles are so TASTY! Keep in mind onions have natural sugar in them so use sparingly.
Finally, a recipe with no sugar !!!!
Really good job with this. So good you share that things need not be complicated. Happy to pass this along!
I am so happy I found this channel
Beautiful knife. A work of Art!
I love that knife
U didnt add salt? If so how much salt?
Back again for this pickle recipe! Thanks again!
Fabulous idea! Always looking for new ideas to keep eggs fresh & fun to eat everyday!
Crocodile Dundee “Now that’s a knife!”
Made some today! Thanks! I’m not suppose to have salt and I don’t want to add sugar.
If it's about your blood pressure and heart, research Keto and your medical condition and salt.
You may be surprised.
Looks awesome brother
How long does it take to pickle before you can eat them?
I am new at all of this. What about other kinds of vinegar besides white vinegar? Wine vinegar, Rice vinegar, Balsamic vinegar, etc?
Thank you.
Love pickling thanks for video I can't have. Sugar
kool recipe. thankyou!
Your welcome. Let me know if you make it!
Thank you for this!
You're welcome!! Show it to someone who you think would like it
Had a duh moment! Purchased some pickled garlic ate the whole jar in 3 days.told my husband to try one piece because that's all was willing to share.he looked at me weird and said...how much sugars in there? I said none its not like bread and butter pickled.are you sure he asks.confidently yes I say.he looks on the back and sure enough there's a small label on the side that says sugar not even close to the label with the nutrition facts which indeed says 0 sugar! I'm getting my karma for only sharing one. Ugggh these labels!
I do love cauliflower, but since you chopped it beforehand wouldn't they get brittle and fall apart? that makes them hard to get out of the jar.
why don't you just use salt water instead vinegar then you would actually let the product ferment and get so much benefits
Those are pint jars. They also come in wide-mouth jars... How could you not know they are pints? It says so on the side of the box they come in... sigh.. youth today...
Do the jars need to be sterilized?
Awww yeah! Something other than keto-sweets!
I have been so frustrated by the lack of sweet pickle relish for Keto that I just need to make my own.
Can I adapt the cukes by finely chopping them and adding powdered erythritol to the liquid? And omitting dill... ?
Right. So, I'monna guess yes!
Thank you!
Of course :)
Like the way you make canning look hip
Can somebody tell me how long it take them to be ready and for how long can you store them?
Thankyou!
After how many days it will be ready?
Thank you. Don't want sugar.
Awesome. I've always wanted to pickle. Now i know. What do you think of Pasta Zero Shirataki Spaghetti? Only 4 carbs!
Hey i just saw that in the grocery. I don't have a recipe yet. have you tried it??
How much salt?
Is there somewhere I can print or copy the recipe and instructions? I tried to write it while watching but it was not something I could accomplish 😐
Quickles.
When to start consuming?
can I use less salt? (I'm on a low sodium diet.)
Woah, we don't have to pressure cook them?
This is awesome! I've been trying to figure out how to keto pickle the right way. Do you have any types for fermenting?
I did a kimchi video. That was nice. Im working on a classic dill pickle. Problem for me is storage. The pickles became cloudy and mushy too quickly so I’m still tweaking the recipe.
Best luck I’ve had has been sauerkraut. Just salt and cabbage.
Fermented pickles are easy two table spoons salt to two quarts water. Distilled water only so you don't disturb lacto bac . Make sure everything is very sterile. 3 to 4 bay leaves in the bottom insure crispness. Add any spices you like but make sure everything is under water so bad bacteria doesn't grow. Let sit for 4 weeks between 68-72 degrees
I love eggs with my homemade salsa
You can use salt water instead of vinegar. Awesome video
That knife though
Nice. How long to keep them on the shelf before opening?
1 day!
@@TheKetoChef Thank you. Keep the greatness coming 😉
That’s the knife I need to add to my collection love Miyabi. Which one is it?
I love that knife! I got the black one, this is the birch wood handle - amzn.to/2C0fRbc
Thanks so much!!!!
Nice subbed
How long will these last after opening? Do they require to be refrigerated?
Yes! You must keep these refrigerated even before opening. These aren't canned, shelf-stable pickles, they're quick pickles, which means they must be kept in the fridge and eaten within a week or two.
I'm looking for a sugar-free shelf-stable pickle recipe myself. This is NOT it.
Who taught you how to cut an onion that way.. the guy who taught ur flipping pan tricks ?
What did you mean when you said onions are "borderline"?
they have some sugar
How long do you let them ferment before opening?
They aren't fermented. I made kimchi if you want to see a fermented video: ruclips.net/video/DQaPZAhWR1Y/видео.html
The Keto Chef But they still have to be set aside for a time before they are “pickled”, no? That was the question. 😕
@Noah Sutherland THANK YOU!
I'm not sure storing them on the shelf is safe. I think you would need to process them in a hot water bath and that would cook and ruin them. Best to store in fridge.
coarse* salt
So when i can open it and eat ???? And do i store it in fridge or what????
Give it two days before popping it. It will last years in the cabinet if you don’t open it. Months in the fridge after opening.
@@TheKetoChef thaaaank u for the response. I must try it🤤🤤🤤🤤
You put the spices in the jars. You don't strain them.
Depends on how strong you want the flavor to be. The spice flavor would get more pronounced as they sit.
I’m not trying to be THAT guy but PLEASE for your own safety do not store unprocessed pickles on your shelf. Refrigerator only! By unprocessed I mean they haven’t gone through the boiling water canning process that kills all the microorganisms inside and seals the jars. Since these are not processed there’s still bacteria in those jars that can proliferate if not kept in a cold environment.
I'm sorry I have to lol. I have never seen such an unsanitary cleaning in my entire life 55yrs. Of how you used a shirt sleeve to clean with.
Please tuck your finger tips under when slicing veg. I couldn't watch. ❤
but i want live bacteria ....probiotics
Yuk
Thomas Delauer?
@@michalis9 Tom doesn't like pickled stuff?
